- Divide regular cream cheese into thirds; place in separate bowls. Tint one portion yellow and one portion orange with yellow and red food coloring. Leave remaining portion white., Using a 3-in. candy corn-shaped cookie cutter, cut two pieces from each bread slice. Spread honey nut cream cheese over eight bread cutouts. Layer with peanut butter and bananas; drizzle with honey. Top with remaining bread cutouts. Decorate top of sandwiches with tinted cream cheese to resemble candy corn.

I used chocolate to make a screaming ghost face design on these Halloween-themed ice cream cookie sandwiches, just so I could do a play on words.

Steps:
- Cover the flat side of 4 cookies with melted dark chocolate; tap the cookies lightly to smooth out the chocolate.
- While still wet, use a piping bag or spoon to make a ghost shape with the white chocolate; tap lightly once more to smooth as needed. More white designs can be added to the dark chocolate background if desired.
- Use melted dark chocolate to make the eyes and screaming mouth; tap or shake once more to even and smooth out.
- Let chocolate cool until hard and dry to the touch, at least 1 hour.
- Scoop ice cream on 4 remaining cookies, and cover with the tops. Carefully press to flatten, and transfer to a freezer to freeze thoroughly before serving.

- In a medium bowl, whisk together the flour, cocoa, baking soda and salt. Using an electric mixer, beat the butter, granulated sugar and vanilla in a large bowl until light and fluffy, about 3 minutes; beat in the egg. Reduce the mixer to low and gradually add the flour mixture, beating until incorporated. Transfer the dough to a piece of plastic wrap and shape into an 8-in. log. Wrap up and refrigerate until firm, at least 4 hours and up to 2 days. Heat oven to 350°F. Unwrap the dough and cut into 1/4-in.-thick slices (you should end up with 28 usable pieces). Place them on ungreased baking sheets, spacing them 2 in. apart. Bake for 4 minutes. Rotate the positions of the sheets and bake until the cookies are set, 4 to 5 minutes more. Let them cool for 5 minutes before transferring to a wire rack to cool completely. Using an electric mixer, beat the cream cheese in a bowl until smooth. Add the confectioners' sugar and beat until light and fluffy, about 3 minutes. Transfer 1/2 cup of the icing to a bowl and tint orange; spoon into a resealable plastic bag. Divide the remaining frosting among 14 of the cookies and sandwich with the remaining cookies. Snip off a small piece of one corner of the bag and pipe spiderwebs on the top of each sandwich.
