This is a twist on traditional chocolate cupcakes for St. Patty's day. I combined a few recipes I found on the web, just storing it here for safe keeping!

Ingredients

10 tablespoons unsalted butter
1 cup Guinness stout
3/4 cup unsweetened cocoa
2 cups sugar
3/4 cup reduced-fat sour cream
2 large eggs
2 cups all-purpose flour
1 tablespoon vanilla extract
2 1/2 teaspoons baking soda

Steps:

Pre-heat oven to 350 degrees.
Grease a 9-inch springform pan and line with parchment paper.
In a large saucepan, combine Guinness and butter.
Place over medium-low heat until butter melts, then remove from heat. Add cocoa and sugar, and whisk to blend.
In a small bowl, combine sour cream, eggs and vanilla; mix well.
Add to Guinness mixture. Add flour and baking soda, and whisk again until smooth.
Pour into buttered pan, and bake until risen and firm, 45 minutes to one hour. Place pan on a wire rack and cool completely in pan.

125 g (4oz) unsalted butter
125 mL (4 fl oz) Guinness (or any other Stout)
60 g cocoa powder
225 g (8oz) light brown soft sugar
2 large eggs, beaten
75 g (3oz) full-fat natural yogurt
2 tsp. vanilla extract
150 g (5oz) self-raising flour
1 tsp. bicarbonate of soda
125 g (4oz) unsalted butter, softened
250 g (9oz) icing sugar, sifted
1 tsp. vanilla extract
200 g (7oz) full-fat cream cheese

Steps:

Preheat oven to 180°C (160°C fan) mark 4. Line a muffin tin with 12 muffin cases. In a large pan, gently heat butter and stout until butter is melted. Remove from heat; whisk in cocoa and sugar. Set aside to cool slightly.
In a jug, beat eggs with yogurt and vanilla, whisk this into the stout mixture. Whisk in flour and bicarbonate of soda.
Divide mixture equally among muffin cases. Bake for 18-20min, until springy to the touch. Cool for 10min, then remove to a wire rack to cool completely.
