I made these for an appetizer last night for me and the guys watching football. They were easy and a big hit!!! I used a FryDaddy and they turned out perfect.

Prep Time 10 minutes

Cook Time 10 minutes

Number Of Ingredients 8

1 lb fresh grouper fillet
1 cup buttermilk
1 egg
35 saltine crackers
1/2 teaspoon garlic salt
1/2 teaspoon black pepper
1 -2 teaspoon hot sauce (crystal)
canola oil, for frying

Steps:

  • Cut the grouper fillets in half lengthwise.
  • Then cut into 1 inch strips. (use scissors).
  • Place nuggets of grouper in a bowl with the buttermilk and hot sauce.
  • Refrigerate 30-60 minutes.
  • Heat oil in a pot or heat your electric fryer.
  • Using your hand, strain out the buttermilk and then crack the egg into the bowl.
  • Mix the egg around.
  • Put the crackers, garlic salt, and pepper into a food processor and process until pretty finely ground. (not too fine).
  • Put the crackers onto a plate and coat the nuggets one at a time, dropping into the hot oil as you go.
  • These fry up really quick (in like 2 minutes).
  • Serve with cocktail sauce.

Number Of Ingredients 11

4 cups canola oil
1 ½ cups all-purpose flour, divided
¾ teaspoon kosher salt, plus extra to serve
½ teaspoon garlic powder
¼ teaspoon paprika
2 small egg yolks
1 cup club soda, cold
1 lemon, halved
1 ½ pound fresh grouper fillet, skin off and cut into 1-inch chunks
6 ounces Fulton Fish Market Seafood Remoulade
freshly ground black pepper

Steps:

  • 1. Heat the oil in a Dutch oven or wok to 375°F; use an instant-read thermometer for accuracy. 2. While the oil heats up, place ¼ cup flour in a shallow dish. Season with salt and pepper; set aside. 3. In a large mixing bowl, combine the remaining 1 ¼ cups flour with the salt, garlic powder, paprika, and some pepper to taste. Add the egg yolks and club soda, whisking with a fork until the batter is of the consistency of heavy cream; it shouldn't be totally smooth. 4. Heat a griddle pan or skillet over high heat until hot. Place the lemon halves in the pan, cut-side facing down, and grill until lightly charred, 1-2 minutes. Set off the heat until ready to serve. 5. Pat the fish dry with paper towels. Transfer to the bowl with the seasoned flour and toss to coat, shaking off any excess. 6. When the oil is ready, add the fish to the batter, gently turning to coat; remove from the batter and carefully lower into the hot oil, deep-frying until golden brown and crisp, turning as needed, 3-4 minutes. 7. When ready, remove to a platter lined with paper towels using a slotted spoon or spider skimmer. 8. Season the nuggets with some salt. Serve with the grilled lemon halves and Fulton Fish Market Seafood Remoulade on the side.
