Ground Pecan Crust (Low Carb) Recipe - Food.com image

Good for cheesecake and pumpkin or Jello pudding pies, but not strong enough for a pie with runny/loose filling. Do NOT substitute margarine or oil for the butter. (learned this the hard way).

Number Of Ingredients 3

6 ounces pecans (8 oz bag is fine too)
4 tablespoons butter
6 (1 g) packets Splenda sugar substitute

Steps:

  • Grind the pecans. Fine ground will help the crust hold together better, coarse gives you a crunchier crust.
  • Add the Splenda to the ground nuts.
  • Add the butter (softened or outright melted).
  • Press mixture into a pie plate or springform pan.
  • Bake for 5-10 minutes between 350 and 450, depending on how toasted you want it.
  • You can also make this crust ahead of time.

Yield Makes 10 to 12 servings

Number Of Ingredients 8

1 cup butter or margarine, softened
1 cup sugar
3 large eggs
3 cups pecan meal
1 tablespoon grated lemon rind
? cup cake flour
Cream Cheese Filling
½ cup raspberry preserves

Steps:

  • Beat butter and sugar at medium speed with an electric mixer until creamy. Add eggs, 1 at a time, beating just until blended after each addition; add in pecan meal and lemon rind, and beat at low speed until blended.
  • Add flour, and beat at low speed just until blended. Spread into 2 buttered and floured 9-inch round cakepans.
  • Bake at 350° for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 5 minutes; remove from pans, and cool for 30 minutes.
  • Spread half of Cream Cheese Filling on top of 1 cake layer; top evenly with half of raspberry preserves. Top with remaining cake layer; repeat procedure with remaining Cream Cheese Filling and preserves.
  • Note: Commercially ground pecans have a very fine texture and are often sold as pecan meal. We found this to be more economical than grinding whole or halved pecans. To make your own pecan meal, place 2 1/2 cups pecan halves in a food processor, and pulse about 45 seconds or until pecans are finely ground.

  • Preheat oven to 350°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling., In a Dutch oven or large saucepan, melt butter over medium heat. Add pecans; cook, stirring constantly, until very fragrant and pecans start to brown, 4-5 minutes. Remove pecans with a slotted spoon, reserving butter in pan. Stir in brown sugar, maple syrup, and salt; bring to a boil. Reduce heat; simmer 2 minutes. Remove from the heat. In a bowl, whisk a small amount of the hot mixture into eggs; return all to the pan, whisking constantly. Stir whiskey, optional, and vanilla into brown sugar mixture; stir in pecans. Pour into crust. , Bake until a knife inserted in the center comes out clean, 55-60 minutes. Cover edges with foil during the last 30 minutes to prevent overbrowning if necessary.
