½ cup good-quality balsamic vinegar
1 tablespoon butter
Kosher salt
Freshly ground black pepper
6 large tomato slices
6 skinned and boned chicken breasts
12 fresh basil leaves
12 fresh mozzarella cheese slices
Fresh basil leaves, torn

Steps:

  • Preheat grill to 350° to 400° (medium-high) heat. Cook balsamic vinegar in a 2-qt. saucepan over medium-high heat 4 to 5 minutes or until slightly thickened; remove from heat, and whisk in butter. Sprinkle desired amounts of kosher salt and freshly ground black pepper over tomato slices and chicken breasts. Grill chicken, covered with grill lid, 6 to 8 minutes on each side or until done. Brush chicken with 2 Tbsp. balsamic mixture; top each with 2 fresh basil leaves and 2 fresh mozzarella cheese slices. Cover with grill lid, and grill 3 minutes or just until cheese melts. Remove from grill; top each chicken breast with 1 tomato slice; drizzle with remaining balsamic sauce. Top with torn basil.

Number Of Ingredients 10

1lb of Cherry or Grape Tomatoes, halved
2 Tbsp of Olive Oil
1 Tbsp of Balsamic Vinegar
3 Cloves of Garlic, peeled and roughly chopped
Salt and Pepper, to taste
4 (6oz each) Thinly Pounded Chicken Breast
Drizzle of Olive Oil
Seasoning of choice or just salt and pepper (for the chicken)
5oz of Fresh Mozzarella, thinly sliced
1/3 cup of Basil Pesto

Steps:

  • 1) Preheat a grill to high, about 500 degrees Fahrenheit, in a grill-safe pan (or an oven safe skillet) add the tomatoes, balsamic, oil, salt, pepper and garlic, give them a stir and pop on the grill. 2) Once the tomatoes are about 3/4 of the way cooked (they should be bursting and slightly caramelized around the edges) drizzle the chicken breast with some olive oil, season to taste and place them alongside the tomatoes, straight on the grill to cook completely. 3) Once chicken is ready, nestle in the pan with the tomatoes, drizzle the pesto right on top, top with the mozzarella and finish cooking until the mozzarella is nicely melted.
