10 tenders boneless skinless chicken tenders
1 1/2 cups gluten free bread crumbs
1/2 cup grated parmesan cheese
1/2 tablespoon fresh sage, chopped
1/4 teaspoon salt
1/4 teaspoon black pepper
3/4 cup all-purpose gluten free flour
1 tablespoon prepared mustard
3 large egg whites
1 cup marinara sauce

Steps:

  • Preheat oven to 375°F. Begin by combining the breadcrumbs, cheese, sage, salt, and pepper in a shallow dish. Place the flour in another shallow dish. Combine the mustard and egg whites in a shallow dish, whisk well. Using 1 chicken tender at a time, place in the flour, shaking off any excess. Dip into the egg white mixture. Coat with the breadcrumbs. Place each one on a greased broiler pan. Continue for all tenders. Bake for 30 minutes, turn carefully and bake for another 30 minutes or until fully cooked. Serve with a side of marinara sauce.

6-8 tenders boneless skinless chicken tenders, or 4 thin-cut boneless skinless chicken breasts
salt and pepper
1/3 cup mayonnaise
2-3 tablespoons vegan parmesan, or regular parmesan
3 tablespoons gluten free bread crumbs, optional

Steps:

  • Preheat the oven to 400°F. Line a baking sheet with aluminum foil for easy clean up. Place the chicken on the baking sheet and season liberally with salt and pepper. In a small bowl mix together the mayo and parmesan and then liberally spread them on the chicken. Sprinkle with gluten free bread crumbs, if desired. Bake in the preheated oven until the chicken is cooked through, approximately 20 minutes.
