Ginger-Thyme Sparkling Lemonade Recipe | EatingWell image

Leave the jug at home—this homemade lemonade concentrate is easier to tote, plus gives you the option to make drinks to order at your picnic. Bring sparkling and still water along with gin and vodka for a bar in your basket.

2 cups water
? cup honey
12 sprigs fresh thyme, plus more for garnish
3 tablespoons finely chopped fresh ginger
2 tablespoons lemon zest
¾ cup lemon juice
2 liters cold plain sparkling or still water
12 ounces gin or vodka (optional)

Steps:

  • Combine water, honey, thyme and ginger in a medium saucepan. Bring to a boil over medium-high heat. Reduce heat to maintain a simmer and cook for 5 minutes. Remove from heat; stir in lemon zest and lemon juice. Let steep for 20 minutes.
  • Strain the mixture through a fine-mesh sieve into a medium bowl. (Discard the solids.) Refrigerate until cold, about 2 hours or up to 5 days.
  • To make each drink, combine 1/4 cup of the lemon mixture with 1/2 cup sparkling (or still) water and 1 ounce gin (or vodka), if desired. Garnish with a thyme sprig, if desired.

2 (6 inch) pieces fresh ginger root, peeled
2 large lemons
¼ cup muscovado sugar
ice cubes
3 sprigs fresh mint, leaves removed and stem discarded
1 liter sparkling water

Steps:

  • Finely shred ginger into a bowl. Zest lemons and add zest to ginger. Mix sugar and juice from the lemons into ginger-lemon zest mixture.
  • Combine ice and mint leaves in a large jug or pitcher. Strain ginger mixture through a sieve directly into the jug; stir in sparkling water.

One of the most refreshing I've discovered to date is panakam, typically made during the Hindi festival Sri Rama Navami. If you can imagine a frosty cold, light, bright ginger beer, you'll have an idea of its taste. I make my version sparkling, and because the traditional jaggery is sometimes hard to come by (and slow to dissolve), I use whatever full-flavored, fine-grain, natural cane sugar I have on hand—muscovado works nicely. This version is also dialed back as far as sweetness goes; some versions I've come across use double or even triple the amount of sugar. Feel free to adjust the sweetness to your liking.
