Garlicky Mayonnaise Recipe

1 garlic clove, finely grated
½ anchovy fillet packed in oil, drained, finely chopped
½ cup mayonnaise
½ cup plain whole-milk yogurt
1 tablespoon fresh lemon juice, plus more
Kosher salt; freshly ground pepper

Steps:

  • Whisk garlic, anchovy, mayonnaise, yogurt, and lemon juice in a medium bowl; season with salt and pepper and more lemon juice, if desired.
  • Do Ahead: Garlicky Mayonnaise can be made 2 days ahead. Cover and chill.

6 cloves garlic
½ teaspoon sea salt
2 egg yolks
1 tablespoon white wine vinegar
1?¼ cups olive oil

Steps:

  • Crush the garlic cloves with the salt into a paste using a mortar and pestle; transfer to a bowl. Stir the egg yolks and vinegar into the mashed garlic. Gradually whisk the olive oil into the mixture in small amounts until the mayonnaise is thick and glossy.

  • Light a grill. In a large skillet, cook the bacon over moderate heat until crisp, about 7 minutes. Drain on paper towels, then chop finely. In a mini food processor, pulse the sun-dried tomatoes with the garlic, chipotle and vinegar until finely chopped. Add the mayonnaise and puree until smooth.
