Fried Shrimp Po boys Recipe - Country Living image

A Louisiana favorite, the po-boy can be make with any number of ingredients, but the shrimp here are a light, sweet contrast to the hot sauce and crispy fried breading.

3 c. canola oil, for frying
1 large egg
1 c. milk
2 tbsp. stone-ground mustard (such as Zatarain’s Creole Mustard)
1 tbsp. yellow mustard
2 c. yellow corn flour (such as Bob’s Red Mill)
4 tsp. garlic salt
Kosher salt and freshly ground pepper
2 loaves Italian bread, cut into 8 equal portions
2 lb. jumbo shrimp, peeled and deveined
1/2 c. tartar sauce
3 c. torn lettuce
4 medium tomatoes, sliced
1/2 c. ketchup
Hot sauce (optional)

Steps:

  • Slice bread loaves lengthwise and place, crust down, on a large baking sheet. Transfer to oven, turn off heat, and warm bread until crispy.
  • Meanwhile, working in batches, dip shrimp in egg batter, then dredge in flour mixture. Fry shrimp in heated oil, until they're cooked through and float to surface, 2 to 3 minutes per batch. Transfer to a paper-towel-lined plate to drain.
  • Spread bottom half of each warmed loaf with 1 tablespoon tartar sauce. Divide lettuce, tomatoes, and shrimp among sandwiches. Drizzle 1 tablespoon ketchup and a few dashes of hot sauce, if desired, over shrimp. Top with remaining bread halves.

2 tbsp. olive oil
2 carrots, sliced
2 celery stalks, sliced
1 small onion, chopped
5 garlic cloves, chopped
Kosher salt
Freshly ground black pepper
1/4 c. dry white wine
8 c. chicken stock
2 1/2 lb. bone-in, ­skinless chicken breast and thighs
2 1/2 c. uncooked wide egg noodles
3 tbsp. chopped fresh flat-leaf parsley
2 tbsp. chopped fresh dill
2 tbsp. fresh lemon juice

Steps:

  • Heat oil in a large pot or Dutch oven over medium heat. Add carrots, celery, onion, and garlic. Season with salt and pepper. Cook, stirring occasionally, until softened and golden brown, 8 to 10 minutes. Add wine and cook until syrupy, 1 minute. Add chicken stock and chicken pieces. Season with salt and pepper. Bring to boil over high heat. Reduce heat to low, cover, and simmer until chicken is cooked through, 40 to 45 minutes. 
  • Remove chicken; shred thighs with two forks and chop breasts into large bite-size pieces. Return meat to pot; discard bones.
  • Add noodles to soup and cook, stirring often, until tender, 6 to 7 minutes. Remove from heat and stir in parsley, dill, and lemon juice. Season with salt and pepper.
