Electric Skillet Roast Beef | Just A Pinch Recipes image

Grandma would only use her oven if she baked several items at one, like meat, potatoes and a pie or bread. In order to save money she used her electric skillet whenever possible. This is her electric skillet pot roast. And its good.

Number Of Ingredients 6

3 tablespoon(s) oil
2 pound(s) round or chuck steak or chuck roast
1 large onion, chopped
- salt and pepper to taste
1 - bay leaf
- vegetables as desired (carrots, onions, potatoes, bell pepper, beans,celery, etc.)

Steps:

  • Heat electric skillet to 350 degrees and brown steak in oil. Add onion to skillet. Sprinkle with salt and pepper. Reduce heat to 250 degrees. Add water to skillet so that bottom of skillet is covered about 1 inch deep. Add bay leaf, cover and simmer for 2 1/2 hours.
  • Add any vegetables you wish. Chunks of carrot, potatoes, celery, onion wedges, etc. Add additional water if needed. Cover and cook for 30-45 minutes until vegetables are tender. Serve with gravy made from skillet drippings.

not quite sure what to do with that not-so-tender leftover steak? Funny thing, I electric-grilled 4 for Sunday dinner & 2 of 'em turned out cut-butter-with-a-hot-knife tender..the other 2, not so much..thicker cuts..I shoulda known better & adjusted my cooking time! Still, I came up with this really tasty follow-up; hope y'all enjoy! BTW, I didn't really measure anything, so adjust the seasonings to your individual tastes!

  • Warm flour tortillas in microwave. Spoon the fajita mixture down the center of the tortilla. Add whatever other toppings you like -- salsa, sour cream, shredded cheese, guacamole, etc -- fold, and Muy delicioso!   • Preheat the oven to 450 degrees F. Whisk the mustard and olive oil in a small bowl. Coat the steak with 2 tablespoons of the mustard mixture, then season with black pepper and set aside. Whisk the chives, tarragon and 2 tablespoons cold water into the remaining mustard mixture. Slice the potatoes into 1/4-inch-thick sticks; pat dry. Whisk the egg whites, paprika, cayenne and 1/4 teaspoon salt in a large bowl; add the potatoes and toss. Coat a rimmed baking sheet with cooking spray. Add the potatoes, letting the excess egg drip off; spread out and spray with cooking spray. Bake until golden brown, 25 minutes. Meanwhile, cook the steak: Sprinkle 1/4 teaspoon salt in a large cast-iron skillet. Heat the pan over high heat until very hot, then add the steak and place another heavy skillet on top to weigh it down. Sear until browned, about 3 minutes per side. Turn off the heat and let the steak rest in the pan, 5 to 8 more minutes for medium rare. Thinly slice against the grain and serve with the fries and herb mustard.
