1 teaspoon plus 1/4 cup butter, divided
1-1/2 cups sugar
1 can (5 ounces) evaporated milk
1/4 teaspoon salt
1/3 cup butterscotch chips
1/3 cup peanut butter chips
1 jar (7 ounces) marshmallow creme
1 cup chunky peanut butter
1 teaspoon vanilla extract

Steps:

  • Line a 9-in. square pan with foil and grease the foil with 1 teaspoon butter; set aside., Cube remaining butter and place in a large heavy saucepan. Add the sugar, milk and salt; cook and stir over medium heat until sugar is dissolved. Bring to a rapid boil; boil for 5 minutes or until a candy thermometer reads 230°, stirring constantly. , Remove from the heat; stir in chips until melted. Stir in marshmallow creme, peanut butter and vanilla until blended. Pour into prepared pan; refrigerate for 2 hours or until firm., Using foil, lift fudge out of pan. Gently peel off foil; cut fudge into 1-in. squares. Store in an airtight container in the refrigerator.

This peanut butter fudge is the perfect sugar free way to get in your sweet fix on a keto diet. It's high in fat and has a rich and creamy peanut butter flavor.

1 cup Natural Peanut Butter
1/2 cup Unsalted Butter (1 Stick)
1/3 cup Low Carb Sugar Substitute
10-20 drops Liquid Stevia
2 tsp vanilla extract
Flakey Salt (Optional to top)

Steps:

  • Line a loaf pan with parchment paper and set aside.
  • In a microwave-safe bowl, add the butter, and microwave it until completely melted.
  • Add in the erythritol and stevia, and whisk well. Microwave in 30-second intervals, whisking in between until all the sweetener is melted.
  • Add in the peanut butter and vanilla extract. Whisk until a homogeneous mixture forms.
  • Pour the mixture into the lined pan, and sprinkle some flakey salt on top if desired.
  • Refrigerate until set at least for an hour.
  • Cut into 14 2x2 inch pieces or smaller .
  • Store in an airtight container in the fridge.
