HOLIDAY FRUITCAKE RECIPE: HOW TO MAKE IT
This is my own fruitcake recipe and it's a family favorite. The mixture of fruits and nuts helps make it a tasty treat. —Allene Spence, Delbarton, West Virginia

- Preheat oven to 300°. Combine fruit and nuts. In another bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine flour, baking powder and salt; add to creamed mixture and mix well. Pour over fruit and nuts; stir to coat. , Transfer to a greased and floured 10-in. tube pan. Bake until a toothpick inserted in center comes out clean, about 2 hours. Cool 10 minutes; remove from pan to a wire rack to cool completely. Wrap tightly and store in a cool place. Bring to room temperature before serving; slice with a serrated knife.

Steps:
- Preheat the over to 350F (180C). Butter an 8x8 baking dish.
- In a big bowl whisk together the eggs and the sugar just until it all comes together, about 30 seconds, no more.
- Add the flour (and baking powder if using) and wisk together just until the flour disappears and there are no more lumps, about 45 seconds, no more. The batter will be quite thick and there won't be a lot of it.
- Spread the fruit over the bottom of the dish and spread the batter over. It will barely cover the fruit and it'll look like it's not enough, but it will be great. Alternatively you can mix the fruit with the batter.
- Bake for 45-55 minutes depending on your oven. A toothpick inserted into the cake should come out clean when the cake is ready.

- Adjust an oven rack to center position, and preheat oven to 350°. To a large baking sheet, add pecans, pistachios, and almonds. Bake until golden and toasty, tossing often, 10 to 12 minutes. Let cool. Lower oven to 300°. Spray a small bundt pan with cooking spray. In a large bowl, cream butter and sugars. Add eggs and vanilla, and beat to combine. In another bowl, mix together flour, baking powder, salt, and spices. Fold dry ingredients into wet ingredients, and add bourbon until combined. Add in toasted nuts and fruit. Transfer to bundt pan and bake until golden and toothpick comes out clean, 45 minutes to 1 hour. Let cool 10 minute, then invert onto a cooling rack to cool completely. Make glaze: Whisk together powdered sugar and heavy cream until smooth. Add more heavy cream a little at a time to reach desired consistency. Drizzle cooled cake with glaze.
