3 Easy Cool Whip Pie Recipes | Just A Pinch image

I was cleaning out old plastic ware, and I found a special Cool Whip mixing bowl with 3 recipes printed on the sides. It must be 20 years old. I thought I'd save the recipes even though the bowl is destined for the feeding of outdoor stray animals. I have not made all these pies, but I believe I remember making the Lemonade Stand Pie. It was good, to my best recollection. (Photos/Kraft) Two of these pies are frozen, and one refrigerated. They will make a wonderfully cool summertime dessert. One regular-sized Cool Whip container has about 4 cups; so use the leftover to dollop each slice.

(1) COOL 'N CREAMY CHOCOLATE PIE
1 3/4 cup(s) cold milk
2 package(s) (4-serve) jell-o chocolate instant pudding
3 1/2 cup(s) thawed cool whip
1 - chocolate pie crust
(2) STRAWBERRY YOGURT PIE
3 - (5.3-oz) containers strawberry yogurt
1 cup(s) sliced fresh strawberries (may use frozen)
3 1/2 cup(s) thawed cool whip
1 - graham cracker pie crust
(3) LEMONADE STAND PIE
1 pint(s) softened vanilla ice cream
1 can(s) (6 oz) frozen lemonade, thawed
3 1/2 cup(s) cool whip
1 - graham cracker pie crust

Steps:

COOL 'N CREAMY CHOCOLATE PIE Place milk in a large mixing bowl. Whisk in the pudding mix for 2 minutes. Stir in Cool Whip until well mixed. Spoon into pie crust and refrigerate 4 hours.
STRAWBERRY YOGURT PIE Place yogurt in large mixing bowl. Stir in the strawberries. Fold in Cool Whip until well mixed. Spoon into pie crust and freeze 4 hours. Remove from freezer 15 minutes before slicing to serve.
LEMONADE STAND PIE Place softened vanilla ice cream in large mixing bowl. Stir in the thawed lemonade concentrate (do not dilute). Stir in Cool Whip until well mixed. Spoon into pie crust and freeze 4 hours. Remove from freezer 15 minutes before slicing to serve.

Using frozen berries means you can make this easy pie year-round. Precooking the filling means you get perfect consistency (no more runny pies) and the cook time on the crust is perfect! I prefer to spell things in the top crust like "I love you."

Ingredients

1 (15 ounce) package pastry for a 9-inch double-crust pie
8 cups frozen mixed berries
½ cup white sugar
¼ cup cornstarch
¼ cup berry-flavored liqueur (such as Whidbey)
1 tablespoon lemon juice
1 tablespoon half-and-half
1 large egg yolk

Steps:

Preheat the oven to 375 degrees F (190 degrees C). Line a 9-inch pie plate with 1 of the pie crusts.
Combine berries, sugar, cornstarch, liqueur, and lemon juice in a large saucepan over medium heat. Stir occasionally as berries thaw and the mixture thickens, 10 to 15 minutes. Remove from heat when it reaches the consistency of a runny jam or a sundae fruit topping.
Pour the mixture into the pie crust. Moisten the edge of the crust with cold water, top with the second crust, and seal by pinching. Poke at least 3 holes in the top crust.
Whip half-and-half and egg yolk together in a bowl with a fork. Brush over pie crust. Place pie on a baking sheet.
Bake in the preheated oven until crust is golden, 20 to 25 minutes. Allow to cool so filling becomes solid, about 1 hour.
