A tasty side dish! Every year at my church's annual fish fry these potatoes are included on the menu. Everyone looks forward to this treat! Great with pork chops! Very easy to prepare. Cut potatoes into thick round "wheels".

3 medium sweet potatoes or 3 medium yams
vegetable oil (for frying)
salt

Steps:

  • Cut potatoes in round "wheels" about 1/2 inch thick and immediately immerse in water to not discolor.
  • Drain and pat dry with paper towel. Fry on low heat until golden brown and stick tender in the middle.
  • Place on paper towels and salt immediately.
  • Serve and enjoy!

500 grams Yam

freshly ground peppers
1 tablespoon clarified butter
1 tablespoon chopped parsley

Steps:

  • Peel the yams, rinse and cut into bite-sized pieces. Place the yams in a pot with salted water and simmer for about 30 minutes. Drain the yams and let cool.
  • Fry the cooked yams in a pan in hot butter, and season with salt and pepper. Serve the fried yams sprinkled with parsley.
