Fried Pizza Dough, Pizza Fritte or Placinta, European street food pan fried pizza brushed with chimichurri sauce, sour cream & cheese.

1 batch rustic pizza dough
1 c canola oil or vegetable oil
sea salt to taste
2 c sour cream
parmigiano-reggiano for grating
1 jar best chimichurri recipe

Steps:

  • Make the rustic pizza dough.Cut the dough into 14 pieces and shape them into rounds.
  • Place them on an oiled cookie sheet and drizzle with a little olive oil. Cover with plastic wrap and allow to sit and rise at room temperature for two hours.
  • In a 10 inch cast iron skillet heat up 1 inch of canola oil to 350? F.
  • With oiled hands flatten a piece of pizza dough and then stretch it into a 8 inch rounds.
  • Gently set it into the hot oil and allow it to cook for a couple of minutes on each side until golden. If the dough puffs up in the middle just stab it with a fork.
  • Transfer the fried pizzas to drain on paper towels then brush it with some of the chimichurri sauce or sour cream.
  • Grate plenty of parmigiano-reggiano on top and serve hot holding it with a tiny piece of wax paper.

This was one of our favorite treats, growing up. Mom would fry dough for breakfast, lunch or a snack. I've carried this tradition down to my children and grandchildren, and I know they're going to do the same with their families. One of the easiest recipes I can give you, actually, not a recipe at all. Just some simple instructions.

1 pound(s) prepared pizza or bread dough (you can purchase this at your local grocery store, or make your own)
- vegetable or canola oil for frying
- large frying pan with deep sides

Steps:

  • Pour about 1" of oil into frying pan, and heat to medium-high. (A tip for knowing when your oil is ready: tear off a tiny piece of bread and when it floats to the top and has bubbly sides it’s ready. You don’t want it sinking to the bottom.)
  • Place dough on floured board and press down to even out a bit. Cut into 8 equal pieces. Put a little flour on your hands (so the dough won't stick) and gently stretch out the dough as far as it will go, without ripping it.
  • Carefully place into the hot oil, cook about a minute (goes fast) or until the side down is golden, then turn over and brown the other side. (Never leave the stove when you're frying something. I learned the hard way, and burned down my first house. Yeah, true story!)
  • Use tongs to remove onto a paper towel or brown paper bag, to drain off any excess oil. Immediately sprinkle on cinnamon sugar or powdered sugar or spread on some butter, and various other toppings, if desired. Serve warm.
  • Your choice of toppings are endless: Powdered sugar Granulated sugar Cinnamon sugar Butter Jam Honey
