Fried Goat Cheese Salad

Provided by The Rachael Ray Staff

Number Of Ingredients 21

Flour
for coating
1 egg
beaten with a splash of water
3/4 cup breadcrumbs
1 teaspoon garlic powder or granulated garlic
Zest and juice of 1 lemon
divided
2 tablespoons flat-leaf parsley
finely chopped
3 tablespoons sesame seeds
1 8-ounce log plain goat cheese
well-chilled
5 tablespoons EVOO Extra Virgin Olive Oil
divided
2 teaspoons Dijon mustard
Salt and ground black pepper
1 heart romaine
chopped
2 cups beet greens
coarsely chopped or baby arugula

Steps:

  • Set up three dishes on the counter: Fill the first with flour, the second with the egg and the third with a combination of the breadcrumbs, garlic powder, lemon zest, parsley and sesame seeds
  • Slice the goat cheese into four equal-sized sections then slice each of those sections into four discs, giving you 16 pieces total
  • Coat each piece in flour, then in egg, then in the breadcrumb mixture
  • Once they're all coated, set them aside while your pan heats up
  • Place a nonstick skillet over medium-high heat with 2 turns of the pan of EVOO, about 2 tablespoons
  • Once the oil is hot, place the coated discs of goat cheese into the pan and cook until golden brown, about 2 minutes per side (be very careful when you're turning them over so that you dont puncture the breading or all of your cheese will spill out)
  • Remove the discs from the pan onto a paper towel-lined plate and let them drain while you make your salad
  • In the bottom of a large salad bowl, combine the lemon juice with the Dijon mustard and whisk in 3 tablespoons EVOO
  • Season the dressing with salt and ground black pepper
  • Add the greens to the bowl and give everything a good toss
  • Top the salad with the fried goat cheese (4 discs per person) and serve

1 (4 ounce) log goat cheese
½ cup Italian-style panko bread crumbs, or as needed
6 tablespoons olive oil, divided, or to taste
1 tablespoon minced garlic
6 cups arugula
3 tablespoons balsamic vinegar, or to taste
salt and ground black pepper to taste

Steps:

  • Pull off small pieces of goat cheese and roll into dime-sized balls.
  • Pour panko bread crumbs into a bowl; roll goat cheese balls in crumbs until coated.
  • Heat olive oil and garlic in a saucepan over medium-high heat. Cook and stir goat cheese balls in the hot oil for 15 to 30 seconds. Scoop them back into the bowl of bread crumbs to create a second coating. Arrange on a rimmed baking sheet.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Broil goat cheese balls, shaking baking sheet every 30 seconds to 1 minute to ensure even browning, about 2 minutes.
  • Toss arugula with remaining 3 tablespoons olive oil, balsamic vinegar, salt, and pepper in a large bowl. Divide among 4 serving bowls; top each bowl with warm goat cheese balls.

  • In a food processor or blender, grind up the pretzels to a very fine crumb. Place them in a bowl. In a separate bowl, Mix the eggs with 2 tablespoons water. Place the flour in a third bowl.  Slice the two packages of goat cheese in half, then in quarters, totaling 8 thick slices of goat cheese. (If the cheese is overly soft, place them in the freezer for 20 minutes before slicing.) Grab one slice and dredge it in flour, shaking off the excess. Dip it in the egg wash, turning it a couple of times to make sure it coats the flour. Finally, drop it in the pretzel crumbs and turn it over to coat. Repeat with the rest of the slices.  Heat 1/2 inch olive oil in a skillet over medium heat. Add four slices to the skillet and fry them on the first side for about 45 seconds, or until golden. (The breading should gently sizzle; if it sizzles too much/fries too fast, turn down the heat.) Turn them slices over using a slotted spoon and fry the other side for about 30-45 seconds, or until golden and crisp. Remove them to a paper towel lined plate. Repeat with the other four slices.  Serve with marinara sauce and a sprinkling of parsley.
