All-Day Apple Butter Recipe: How to Make It image

I make several batches of this simple and delicious homemade apple butter recipe to freeze in jars. Depending on the sweetness of the apples used, you can adjust the sugar to taste. —Betty Ruenholl, Syracuse, Nebraska

Number Of Ingredients 5

5-1/2 pounds apples, peeled, cored and finely chopped
4 cups sugar
2 to 3 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon salt

Steps:

  • Place apples in a 3-qt. slow cooker. Combine sugar, cinnamon, cloves and salt; pour over apples and mix well. Cover and cook on high for 1 hour. , Reduce heat to low; cover and cook until thickened and dark brown, 9-11 hours, stirring occasionally (stir more frequently as it thickens to prevent sticking). , Uncover and cook on low, 1 hour longer. If desired, stir with a wire whisk until smooth. Spoon into freezer containers, leaving 1/2-in. headspace. Cover and refrigerate or freeze.

Follow these step-by-step, photo illustrated instructions for our delicious Apple Butter Recipe. This is just another in our Canning 101 series of recipes for preserving our heritage, one jar at a time. Apple Butter is really easy to make despite the fact that it takes a little bit of time to slow cook it to perfection. Your family will love it and, it makes a great gift item for those special folks on your gift giving list.

Number Of Ingredients 12

5 lbs. Apples
3 Cups Water
1 cup Apple Cider Vinegar
½ cup Brown Sugar
3 ½ cups White Granulated Sugar, adjust as needed according to instructions.
2 teaspoons Cinnamon
1 teaspoon Vanilla Extract
1 teaspoon Ground Cloves
1 teaspoon Ground Allspice
½ teaspoon Nutmeg
1 Lemon, zest plus juice.
1 pinch of Salt

Steps:

  • Wash the Apples in cool water.
  • Slice apples into quarters or smaller pieces if using very large apples.
  • Add 3 cups of Water to a large sauce pot, place on Medium-High Heat, bring to a rolling boil.
  • Add Apple Cider Vinegar.
  • Add the sliced apples.
  • Cover pot, reduce heat and let apples simmer for about 30 minutes or until soft.
  • Firmer apples will need more cooking time. Stir apples as needed as they cook down.
  • Use a spoon to remove apples from liquid, place apples in a food mill or sieve.
  • Force the pulp through sieve and place in separate bowl below.
  • Measure the amount of puree you now have as you place it back into the sauce pot.
  • Add ½ cup Sugar to each cup of apple puree, adjusting amount as needed… starting with ½ cup as Brown Sugar and the remainder as White Sugar. You’ll need 1/2 cup Sugar for each cup of puree.
  • Stir sugar until it dissolves.
  • Add Cinnamon
  • Add Ground Cloves
  • Add Ground Allspice
  • Add Lemon, zest and juice only.
  • Add Vanilla Extract
  • Add pinch of Salt
  • Stir well to incorporate all flavors.
  • Place sauce pot over very low heat and let simmer for about 6 hours, stirring as needed to keep from burning. Mixture will thicken over time and splatter if not watched carefully.
  • As it thickens, place a spoonful on a saucer that has been kept in the freezer.
  • Swipe your finger through the butter to see if it will leave a trail or if it runs back together.
  • When done, ladle into hot jars leaving ¼ inch headspace.
  • Remove air bubbles, clean rim, apply lid, apply band, tighten finger tight.
  • Process 10 minutes using the water bath method.

Cover and cook on low for 10 to 12 hours or until apples are deeply golden and falling apart.  Using an immersion blender or regular blender, blend apples until smooth. If using a regular blender, pause to remove lid every so often to let steam escape.  Pour apple butter into jars and let cool to room temperature. Cover and store in refrigerator. It will keep for a few weeks.

In this very classic, cinnamon-scented pie, the apples are sautéed in butter before they’re piled in the crust, ensuring that they’re tender but not mushy. Use firm, crisp apples here, preferably all one kind so the slices cook evenly. Honeycrisp, Golden Delicious, Ginger Gold and Granny Smith apples are good options. (Honeycrisps will give you the sweetest pie, while Granny Smiths the most tart.) If using a glass or ceramic pie pan, consider parbaking the bottom crust. Glass doesn’t conduct heat as well as metal, so the crust may not cook through if you don’t parbake.

  • Place pie on the hot sheet pan and bake for 20 minutes. Reduce heat to 375 degrees and bake for another 30 to 40 minutes, until the filling bubbles in the steam vents, and the crust is golden brown. Transfer pie to a wire cooling rack and allow to cool for at least 2 hours before serving. The pie can be baked up to 24 hours ahead of serving; do not refrigerate before serving.

This is the apple crisp from my childhood (there is no oatmeal in the topping). If I could only pick one dessert to make the rest of my life, this would probably be it. Mom always made this in her beautiful copper au gratin pan. I bought the same pan when I got married, just so I could make this dessert. Originally from the 1966 version of the "Woman's Day Encyclopedia of Cookery", Mom adapted it slightly over the years (with a little help from Cooks Illustrated I think). Cutting the apples into "cubes" (instead of slices) helps the apples keep the apples firm throughout. I have made this with pecans or walnuts. I have also made it without nuts. I like it best with pecans, but all versions are yummy!! I love it warm or cold. You can serve it with ice cream, but I usually only do that for dinner parties.
