1 garlic clove, finely chopped
1 tbsp (15 ml) olive oil, plus more for drizzling
6 cups (140 g) baby spinach, coarsely chopped
1/2 tsp dried oregano
3/4 cup (90 g) crumbled feta cheese (see note)
4 Greek pitas or naan bread, about 8 inches (20 cm) in diameter

Whipping feta with a little yogurt yields a salty, tangy spread that pairs perfectly with the marinated artichokes and roasted red peppers. Scattering arugula over the top adds freshness.

1 large or 2 small flatbreads or naan (about 7 to 8 ounces total; see Tip), preferably whole-grain
¾ cup crumbled feta cheese
½ cup whole-milk plain Greek yogurt
2 tablespoons chopped fresh oregano
1?½ teaspoons grated lemon zest
1?½ teaspoons lemon juice
¼ teaspoon ground pepper
1 cup drained marinated artichoke hearts, chopped
½ cup roasted red peppers, rinsed and sliced
2 cups baby arugula
¼ teaspoon Aleppo pepper or crushed red pepper
2 teaspoons extra-virgin olive oil

Steps:

  • Preheat oven to 400°F.
  • Place flatbread(s) on a baking sheet. Bake until golden and crispy around the edges, 7 to 9 minutes.
  • Meanwhile, place feta in a food processor and pulse until it forms a ball. Add yogurt, oregano, lemon zest, lemon juice and ground pepper; process until smooth.
  • Spread the feta mixture over the flatbread(s). Scatter artichoke hearts and roasted peppers on top. Bake until the toppings are heated through, 10 to 12 minutes.
  • Top with arugula, sprinkle with Aleppo pepper (or crushed red pepper) and drizzle with oil. Cut into 4 slices.
