This traditional flan recipe adapted for the Instant Pot is so rich, creamy and silky smooth and the caramel topping is absolutely heavenly.

Number Of Ingredients 6

½ can evaporated milk (½ of a 12 fluid ounce can, 6 fluid ounces)
½ can sweetened condensed milk (½ of a 14 fluid ounce can, 7 fluid ounces)
3 eggs
4 ounces cream cheese (cubed, ½ of an 8-ounce package)
½ cup granulated sugar
3 cups water

Steps:

  • make the Caramel
  • prepare the Flan Mixture
  • set the Cooking Time
  • Unmold and Serve

2 cans (12 oz. each) GOYA® Evaporated Milk
1 can (15 oz.) Coco GOYA® Cream of Coconut
1 can (14 oz.) GOYA® Sweetened Condensed Milk
1 can(13.5 oz.) GOYA® Coconut Milk
½ cup white rum (optional)
1 tsp. vanilla extract
½ tsp. ground cinnamon, plus more for garnish, if desired
Cinnamon sticks (optional)

Steps:

  • 1. In bowl of blender, add evaporated milk, cream of coconut, sweetened condensed milk, coconut milk, rum (if using), vanilla extract and ground cinnamon. Blend on high until mixture is well combined, 1-2 minutes.
  • 2. Pour coconut mixture into glass bottles; cover. Transfer to refrigerator. Chill until cold.
  • 3. To serve, pour coquito into small serving glasses. Garnish with ground cinnamon and cinnamon sticks, if desired.

In a stand mixer fitted with the paddle attachment, combine the cream cheese and sugar and beat until fluffy, about 2 to 3 minutes. Continue beating and add melted chocolate. If the mixture is too stiff, thin with milk, a tablespoon at a time, to bring it to a spreadable consistency. Spread the icing on the top and sides of the cooled cake.
