Steps:

  • Place oven rack in upper third of oven; heat broiler. Toss chiles with oil and a pinch each of salt and pepper. Broil until beginning to soften, about 2 minutes. In a bowl, combine apricots, scallions, and 1/4 tsp each salt and pepper. Divide cheese among chiles, then spoon apricot mixture on top.
