12 ounces skinless fish fillets
1 tablespoon olive oil
1/4 teaspoon ground cumin
1/8 teaspoon garlic powder
3 tablespoons mayonnaise or 3 tablespoons salad dressing
1 teaspoon lime juice
1 1/2 cups packaged shredded cabbage with carrots (coleslaw mix) or 1 1/2 cups shredded cabbage
8 taco shells, warmed according to package directions
1 recipe mango salsa

Steps:

  • Thaw fish, if frozen. Rinse fish and pat dry with paper towels. Cut fish crosswise into 3/4-inch slices. Place fish in a single layer in a greased shallow baking pan. Combine olive oil, cumin, and garlic powder. Brush over fish. Bake in a 450 degree F oven for 4 to 6 minutes or until fish begins to flake when tested with a fork.
  • Meanwhile, in a medium bowl stir together mayonnaise and lime juice. Add cabbage; toss to coat. Spoon some of the coleslaw mixture into each taco shell; add fish slices and top with Mango Salsa.
  • Mango Salsa: In a medium bowl combine 3/4 cup chopped, peeled mango or peach; 1/2 medium red sweet pepper, seeded and finely chopped; 2 tablespoons thinly sliced green onion; 1/2 jalapeño chile pepper, seeded and finely chopped; 1-1/2 teaspoons olive oil; 1/4 teaspoon finely shredded lime peel; 1-1/2 teaspoons lime juice; 1-1/2 teaspoons vinegar; 1/4 teaspoon salt; and 1/8 teaspoon black pepper. Makes 1 cup.

0.25 tsp Chipotle chili powder or regular chili powder
1 pound(s) Uncooked tilapia fillet(s) or catfish fillets
2 tsp Canola oil
0.5 cup(s) Plain lowfat yogurt
2 Tbsp Cilantro chopped fresh
1 Tbsp Light mayonnaise
1 Tbsp Fresh lime juice
2 cup(s) Packaged coleslaw mix (shredded cabbage and carrots) or just shredded cabbage, lightly packed
8 medium Corn tortilla(s) warmed
8 Tbsp Mango salsa or other salsa

Steps:

  • Mix together cumin, ½ teaspoon of salt, and the chile powder in cup; sprinkle over fish.
  • Heat oil in large heavy nonstick skillet over medium-high heat. Add fish and cook until just opaque in center, about 3 minutes per side. Transfer fish to plate and let cool slightly. With fork, ?ake fish into big chunks.
  • To make slaw, stir together yogurt, cilantro, mayonnaise, lime juice, and remaining ¼ teaspoon salt in medium bowl. Add cabbage and toss until mixed well.
  • Place about ¼ cup slaw on one half of each tortilla. Top with fish and 1 tablespoon salsa. Fold tortillas over to enclose filling.
  • Per serving: 2 tacos

Just throw some in the oven or on the grill. Or just wrap up in foil which is what I like to quite a bit. Just brush with olive oil, lime juice, salt and pepper mixed with chili powder. Just brushed on the corn. Wrapped and grilled. Then throw in some some yellow rice or Mexican rice on the side, cooked in chicken broth with scallions and cilantro and you have dinner for up to 6 people for hardly anything. But don't forget the margaritas. I am always saying that you can really have a great quick dinner with amazing flavor that really doesn't cost much. This is it!!
