BAKED FETA PASTA RECIPE FROM TIKTOK - RACHAEL RAY SHOW

Baked Feta Pasta Recipe From TikTok - Rachael Ray Show image

When we saw the creamy TikTok-famous Baked Feta Pasta recipe making its way around the internet, we had to try it ourselves.

Provided by Kate Bennert

Number Of Ingredients 10

1 pound bowtie pasta
½ cup olive oil
plus more for finishing
2 boxes cherry tomatoes (around 20-25 ounces)
One 8-ounce block feta
2 cloves garlic
finely chopped
A few pinches red pepper flakes
1 handful fresh basil leaves
Salt and pepper

Steps:

  • Preheat oven to 400°F
  • Add olive oil to a baking dish and toss with whole cherry tomatoes, salt and pepper until everything is coated
  • Add the feta in the middle and top with a splash more of olive oil plus a few cranks of fresh pepper
  • Bake for 30 minutes
  • Meanwhile, prepare bowtie pasta according to directions then strain
  • After the 30 minutes has passed, crank the heat up to 450 and bake for another 5-10 minutes or until the feta and tomatoes have browned
  • Remove the baking dish from the oven and add garlic and red pepper flakes and stir so the residual heat cooks the garlic and releases the flavors from the red pepper flakes
  • Toss in the pasta and stir one more time
  • Finish with fresh basil, another splash of olive oil and season with salt and pepper

Spinach and Feta Phyllo Triangles

Provided by EPICURIOUS.COM

Total Time 1 1/2 hr

Cook Time 45 min

Yield Makes 30 pastries

Number Of Ingredients 5

1 stick (1/2 cup) plus 1 tablespoon unsalted butter
1 lb baby spinach
1/2 lb feta, crumbled (scant 2 cups)
1/2 teaspoon freshly grated nutmeg
10 (17- by 12-inch) phyllo sheets, thawed if frozen

Steps:

  • Melt 1 tablespoon butter in a 12-inch heavy skillet over moderate heat, then cook spinach, stirring, until wilted and tender, about 4 minutes. Remove from heat and cool, about 10 minutes. Squeeze handfuls of spinach to remove as much liquid as possible, then coarsely chop. Transfer to a bowl and stir in feta, nutmeg, 1/2 teaspoon salt, and 1/2 teaspoon pepper.
  • Preheat oven to 375°F.
  • Melt remaining 1 stick butter in a small saucepan, then cool.
  • Cover phyllo stack with 2 overlapping sheets of plastic wrap and then a dampened kitchen towel.
  • Take 1 phyllo sheet from stack and arrange on a work surface with a long side nearest you (keeping remaining sheets covered) and brush with some butter. Top with another phyllo sheet and brush with more butter. Cut buttered phyllo stack crosswise into 6 (roughly 12- by 2 3/4-inch) strips.
  • Put a heaping teaspoon of filling near 1 corner of a strip on end nearest you, then fold corner of phyllo over to enclose filling and form a triangle. Continue folding strip (like a flag), maintaining triangle shape. Put triangle, seam side down, on a large baking sheet and brush top with butter. Make more triangles in same manner, using all of phyllo.
  • Bake triangles in middle of oven until golden brown, 20 to 25 minutes, then transfer to a rack to cool slightly.

FETA-BRINED ROAST CHICKEN RECIPE - NYT COOKING
Brining a chicken before roasting can make for a particularly juicy, tender bird. Using feta in the brine adds a complex and earthy flavor to the mix. Don’t skip the step of taking the chicken out of the brine an hour before cooking. This allows the bird to come to room temperature and dries it out a bit, which helps crisp the skin. This recipe calls for a lot of black pepper, and if you like a spicy bite, don’t afraid to go for the full 2 tablespoons. Or bring the amount down for something milder. In either case, do grind it yourself; the pre-ground stuff is missing all the essential oils that give freshly ground black pepper its woodsy, floral notes. Roasted potatoes make an excellent side dish.

GREEN PEPPERCORN-MARINATED FETA | FOOD & WINE
Marinating cubed feta is a low-effort move with big-flavor results. Pair it with crackers and fruit to anchor your cheese board. Feta’s slightly airy texture makes it perfect for soaking up bold flavors, such as these briny, piquant peppercorns. For the best results, look for feta in brine, and drain off the brine before marinating. Save the feta brine to marinate chicken or pork chops.
