3 -4 cups squash
1 onion, diced
1/2 cup milk (eyeballed for consistency)
10 (1/2 ounce) cans cream of broccoli soup
1/2-1 cup breadcrumbs
1/2 cup cheddar cheese
cajun seasoning
pepper

Steps:

  • cook squash and onion in about a tablespoon of butter with seasonings.
  • when done lightly mash mixture.
  • combine milk and soup mix well and add squash mixture.
  • put in a baking dish and layer breadcrumbs then cheese.
  • cook in 350 degree oven for 10-15 minutes.

I love squash casserole but you can't eat a lot because it is kind of fattening. This recipe takes the guilt out but leaves the flavor in. Very good for those of you who are trying to cut your fat intake.

- 1/2 cup plain low-fat yogurt
- 1/2 cup low-fat cottage cheese
- 1/4 cup grated parmesan cheese
- 1/4 teaspoon dried whole thyme
- 2 eggs, beaten
- vegetable cooking spray
- 1 cup sliced onion
- 3 cups sliced yellow squash
- 1/4 cup soft whole wheat bread crumbs, divided or wheat cracker crumbs

Steps:

  • Combine yogurt, cottage cheese, Parmesan cheese, thyme and eggs in a bowl; set aside. Coat a skillet with cooking spray; place over medium heat until hot. Add onion; saute until tender, drain and set aside. Place 1 cup squash in a 2-quart casserole coated with spray. Top with 1/3 of onion and 1/3 yogurt mixture. Repeat procedure with remaining squash, onion and yogurt mixture. Sprinkle with bread crumbs, cover and bake at 350 degrees F for 25 minutes. Uncover and bake until top is browned.

I saw a golden head of cauliflower in the supermarket and had to buy it. It must be healthier then just white I thought. It is very pretty! Well I wanted to roast this using very little oil and I did achieve it. Hope you enjoy it this way or if you don't have a problem with weight go ahead and use more olive oil. Try it on the grill just wrap in foil!
