8 ounces enoki mushrooms
1 teaspoon sesame oil
1 large clove garlic, finely chopped
1 teaspoon low-sodium soy sauce (such as Bragg®)
½ teaspoon finely grated fresh ginger

Steps:

  • Cut the bottom 2 inches off the mushrooms and discard. Separate the mushroom strands gently.
  • Heat oil in a medium-sized nonstick skillet over medium heat. Add garlic and cook until just fragrant, about 1 minute. Add mushrooms and stir-fry until they begin to wilt, about 2 minutes. Add soy sauce and ginger; toss to coat. Cook 1 to 2 minutes more.

I went to the morning market today and saw that the small bags of enoki mushrooms were not bad, so I bought two bags back and plan to eat them with cucumbers. In fact, I miss the yellow enoki mushrooms in the past, but I don’t know why I can’t buy them now. They are all white. Enoki mushrooms. Flammulina velutipes is very nutritious, and eating more fungus is good for people, so I often eat fungus at home.

250 grams Enoki mushroom
1 Cucumber
20 grams parsley
10gram garlic
8 grams Pepper oil
10ml Vinegar
2 grams salt

Steps:

  • Prepare enoki mushrooms, cucumbers and parsley
  • Cut off the old roots of the enoki mushrooms, tear them apart by hand and wash them.
  • Boil in boiling water for 3 minutes
  • Then remove the cold water and use a vegetable dryer to shake off the excess water for later use
  • Wash the cucumbers and wipe them with a wire grater. Wash the coriander and cut finely for later use.
  • Put the dried enoki mushrooms in the basin, add the cucumber shreds and coriander
  • Use garlic tongs to chop the garlic into minced pieces and put it in
  • Add salt
  • Add appropriate amount of vinegar
  • Finally, add homemade pepper oil and stir well.

  • To Prep Slice to remove and discard the base of the enoki mushrooms. Do not rinse mushrooms as the water will contribute to a soggy dish. To Cook In a mixing bowl, whisk together tempura flour with garlic powder and sweet paprika powder. Add ice water slowly and whisk briefly to combine. Do not overmix as gluten will form in the batter. Using ice water is also key to making crispy tempura. Heat up oil in a deep frying pan or wok on high heat. Test the temperature of the oil with a bamboo chopstick. If bubbles rise rapidly around the chopstick, the oil is ready for frying. Tear enoki mushrooms into smaller bunches and fan them out. Dip into the batter, let the excess batter drip off and gently slide the enoki mushrooms into the hot oil. Use a pair of chopsticks and slowly stir to let mushrooms fan out. Fry both sides of the mushrooms for about 5 mins or until they turn golden brown. Remove mushrooms from oil and onto a paper towel to remove excess oil. Sprinkle mushrooms with togarashi and chopped spring onions. For the Spicy Mayo Dip, mix together mayonnaise with sriracha and sprinkle with more togarashi, if desired. Serve on the side.
