Slow-cooker ham with sticky ginger glaze - BBC Good Food image

A small gammon will easily fit in a slow cooker. Cook it low and slow for homemade glazed ham that's ideal for sandwiches, party buffets or simply sliced and served with chips

1 onion, thickly sliced
10 cloves, plus extra for studding
1 medium gammon joint, approx 1.3kg
1.5 litre bottle ginger beer
1 tbsp English mustard
3 tbsp ginger preserve

Steps:

  • Put the onion and 10 cloves in the base of the slow cooker then nestle in the gammon joint. Pour over the ginger beer then cover and cook on LOW for 7 hours until the gammon is tender, but still holding its shape. You can cool then chill the gammon at this stage if you prefer.
  • Heat the oven to 200C/180C fan/ gas 6. Carefully remove the skin from the gammon leaving a layer of fat behind. Score the fat in a diamond pattern with a sharp knife, making sure you don't cut into the meat, then stud the centre of each diamond with cloves.
  • Mix the mustard and ginger preserve in a bowl, spoon or brush over the gammon then bake for 20 mins until golden and sticky. If roasting from cold you will need to add another 20 mins to the cooking time.

2 lb split wings
1/2 tsp each salt and pepper
2 tbsp canola oil
1/4 cup honey
2 tbsp sriracha hot sauce
4 tsp minced fresh ginger
1 garlic clove (minced)
2 green onions (thinly sliced)
2 lbs split wings
1/2 cup store-bought jerk marinade
1 cup Water
2 tbsp brown sugar
2 tbsp canola oil

Steps:

  • Season wings with salt and pepper.
  • Ensure that inner pot of Instant Pot Duo Crisp + Air Fryer is dry, then place air-fryer basket in pot. In three batches, add wings to the basket; do not over-fill. Drizzle with some of the oil.
  • Using the Air Fryer Lid select Air Fry at 400°F for 20 minutes (turning the basket halfway during cooking time) or until wings are golden brown, crispy and cooked through.
  • Whisk together honey, hot sauce, ginger and garlic. In large bowl, toss hot wings with sauce.
  • Return wings back to air-fryer basket in 3 batches; do not over-fill. Using the Air Fryer Lid select Air Fry at 400°F for 5 minutes or until sauce is sticky and wings are well glazed.
  • Garnish with green onions before serving.
  • Toss wings with jerk marinade; add to inner pot of Instant Pot Duo Crisp + Air Fryer. Pour in water. Place the pressure cooker lid on pot and lock into place to seal. Select Pressure Cook/Manual setting on High Pressure for 10 minutes.
  • When pressure cooking is complete, Quick Release the pressure. Once pressure is released, remove the lid.
  • Using tongs, remove wings from inner pot.
  • With lid off, select Sauté setting and set to High Temperature. Stir in brown sugar and bring cooking liquid to boil. Cook for 12 to 15 minutes or until thickened. Transfer sauce to serving dish; reserve and set aside.
  • Ensure that inner pot is dry, then place air-fryer basket in pot.
  • Return wings to air-fryer basket in 2 batches; do not over-fill. Drizzle with some of the oil. Using the Air Fryer Lid select Air Fry at 400°F for 5 minutes or until chicken wings are golden and crispy. Serve with reserved jerk sauce for dipping.
