Steps:

  • In a large bowl, whisk together flour, salt, and baking powder. Cut butter into flour using your hands or a pastry cutter until pea-sized. Add water and egg and mix until a dough forms. Turn dough out on a lightly floured surface and knead until smooth, about 5 minutes.  Wrap in plastic wrap and refrigerate for at least 1 hour.  Preheat oven to 400° and line two large baking sheets with parchment paper. In a large skillet over medium heat, heat oil. Add onion and cook until soft, about 5 minutes, then add garlic and cook until fragrant, 1 minute more. Add ground beef and cook, breaking meat up with a wooden spoon, until no longer pink, 5 minutes. Drain fat. Return pan to medium heat, and stir tomato paste into beef. Add oregano, cumin, and paprika, and season with salt and pepper. Add tomatoes and jalapeños and cook until warmed through, about 3 minutes. Remove from heat and let cool slightly. Place dough on a lightly floured surface and divide in half.  Roll one half out to ¼” thick. Using a 4.5” round cookie cutter, cut out rounds. Repeat with remaining dough. Reroll scraps once to cut out more rounds.  Lightly moisten outer edge of a dough round with water and place about 2 tablespoons filling in center and top with cheddar and Monterey. Fold dough in half over filling. Use a fork to crimp edges together. Repeat with remaining filling and dough.  Place empanadas on prepared baking sheets and brush with egg wash. Bake until golden and filling is warmed through, about 25 minutes.  Garnish with cilantro and serve with sour cream. Use a fork to crimp edges together, then brush with egg wash. Repeat with remaining filling and dough.  Place empanadas in a parchment-lined Air Fryer basket, making sure they don't touch, and cook in batches at 400° for 10 minutes. Garnish with cilantro and serve with sour cream.

Cook Time 20 minutes

Yield 10

Number Of Ingredients 16

1 tablespoon olive oil
1/2 pound ground beef
1/2 yellow onion (, diced fine)
1/2 medium green pepper (, diced fine [See Note 6])
1/2 medium red pepper (, diced fine)
2 Jalapenos (diced [Optional])
1 tbsp Chipolte in Adobo Sauce (more or less to taste, [Optional])
1/2 cup tomato sauce or crushed tomatoes (, or more if you prefer a saucier filling. )
1/4 tsp cumin (more or less, to taste)
1 tsp ground cayenne pepper (, more or less depending on your spice level)
1/4 cup sliced green olives (, optional)
1 teaspoon garlic (, minced)
1/2 teaspoon dried oregano
salt and ground black pepper (, more or less to taste)
10 (1 pkg) Empanada Dough Discs ([See Note 5])
1 egg (, lightly beaten)

Steps:

  • Pre-heat oven to 350°F. Prepare a baking tray with a silicone mat, parchment paper, or aluminum foil and set aside.
  • Heat oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it us with a spoon or rubber spatula, about 10 minutes.
  • Add onions and peppers and cook until soft, about 5 minutes more.
  • Stir in tomato sauce (or crushed tomatoes), chipolte in adobo (if adding), cumin, cayenne, garlic, oregano, sliced olives, salt, and black pepper. Lower heat to medium-low and simmer until mixture thickens, about 15 minutes. Taste and adjust spice level to your tastes.
  • Remove and set aside until cool enough to handle.
  • Spoon about 2 heaping tablespoons of meat mixture into the middle of the empanada wrapper, fold in half to form a half-moon; moisten the edges with water and pinch to seal or crimp edges with a fork.
  • With a pastry brush, lightly brush egg wash over the top side of the empanada dough. This encourages browning, but may be omitted for egg-free empanadas.
  • Place empanadas on a foil-lined sheet pan sprayed lightly with non-stick cooking spray. Bake Empanadas until crisp and golden brown, about 20 to 30 minutes.

ARGENTINEAN EMPANADAS RECIPE - FOOD.COM
Empanadas are very popular as a street food in South America. Essentially, it is a crescent-shaped pastry with a filling, which may vary greatly by region or preference. Empanadas can be fried or baked, and may use a variety of fillings from meat or seafood to fruit or cheese. While this recipe uses the filling most popular in Buenos Aires, you can fill an empanada with virtually anything you please, so experiment! Tip: A recipe for empanada dough is given here, but they can be found in the frozen pastry section of many specialty or Hispanic groceries. If you are in a rush or just feeling lazy, frozen puff pastry can serve as an adequate substitute. Note: To the reviewer who said the flavor did not seem authentic, you probably haven't had meat empanadas from Argentina then! I am Argentine, and the ground beef empanadas you find there *always* have cumin. Other cultures may have different fillings.

With your thawed Goya discos, spoon about 1 tbsp of the mixture into the middle with a sprinkle of cheese, fold-over and moisten edges with the egg and seal with a fork. Heat 2 1/2 inches of oil in a deep sauce pan on medium heat. Cook empanadas in batches, turning till lightly browned on both sides. Drain on paper towels and enjoy one of my favorite foods on earth!"
