Baked Eggs With Onions and Cheese Recipe - NYT Cooking image

Eggs can be baked on a bed of almost anything -- cooked spinach and sliced tomatoes come to mind immediately -- but the trick in every case is to avoid overcooking. The consistency of baked eggs should be like that of fried eggs, with a barely cooked white and a soft, runny yolk.

Yield 4 to 8 servings

4 tablespoons butter or olive oil
4 cups sliced onions
Salt and freshly ground black pepper
1 1/2 cups coarse bread crumbs
1 cup grated Gruyere or Cantal cheese
1/2 cup grated Parmesan
8 eggs

Steps:

  • Preheat oven to 450 degrees. Put butter or oil in large, ovenproof skillet, and set over medium-high heat. Add onions and a liberal sprinkling of salt and pepper, cover skillet and turn heat to medium. Cook, stirring occasionally, until onions are very soft and tender but not browned, for about 15 minutes.
  • Combine bread crumbs and cheeses, and sprinkle half of this mixture over onions. Use back of spoon to make 8 little nests in the mixture, and crack 1 egg into each. Season with salt and pepper, and distribute remaining bread crumbs and cheese mixture over top.
  • Bake for 5 minutes, or until eggs are barely set. Turn on broiler, and run skillet under it to brown top for a minute or so, being careful not to overcook the eggs. Serve hot or at room temperature.

1 piece onion
2 pcs egg
3 grams salt
5 grams Soy sauce
1 petal garlic
a little Scallions
10gram Peanut oil
a little pepper

Steps:

  • Beat two eggs
  • Slice the onion, spicy eyes! ! !
  • Heat up a non-stick pan, put 5 grams of oil, pour in the egg liquid, and cut into egg cubes when it is slightly solidified
  • Add 1 gram of salt and a little pepper to the fried eggs, stir-fry them evenly, and set aside
  • Pour the remaining oil in the pot, stir fry the garlic, the whole thing is fine
  • Pour the onion strips and stir fry
  • Add 2 grams of salt and light soy sauce and continue to stir fry
  • When the onion is out of water, fry, fragrant and soft, you can put the eggs and green onions in, and then stir fry a few times.

I'm not sure if I came up with this on my own or if it's a common recipe but I had a craving for eggs with cheese and mushrooms last night, when I started to make it and get the ingredients, I discovered to my dismay that we were totally out of cheese which is quite unusal in my house, anyway, I sauted some sliced fresh muchrooms and chopped onions in butter, added some parmesan cheese, let it saute for about 15 minutes, then scrambled eggs and added it to the other ingredients....was pleasantly surprised, it came out very tasty and I will be making it again, DH an DS loved it.
