TSAO MI FUN (TAIWANESE FRIED RICE NOODLES) RECIPE | ALLRECIPES

Tsao Mi Fun (Taiwanese Fried Rice Noodles) Recipe | Allrecipes image

My mom's been making me tsao mi fun, in Mandarin, or tsa bi whun, in Taiwanese, since I was a little girl. Tsa bi whun literally translates to 'fried rice noodles'. You'll most likely find all the ingredients at your local supermarket except for the five spice powder, dried Chinese black mushrooms and rice vermicelli which can be found at your local Asian food mart. All the measurements here are pretty much to taste, some people like more pork, some less, some more soy sauce, some less, etc.

Total Time 1 hours 10 minutes

Prep Time 35 minutes

Cook Time 15 minutes

Yield 4 servings

Number Of Ingredients 18

½ pound thinly sliced pork loin
¼ cup soy sauce
¼ cup rice wine
1 teaspoon white pepper
1 teaspoon Chinese five-spice powder
1 teaspoon cornstarch
4 dried Chinese black mushrooms
1 (8 ounce) package dried rice vermicelli
¼ cup vegetable oil, divided
2 eggs, beaten
¼ clove garlic, minced
1 tablespoon dried small shrimp
3 carrots, cut into matchstick strips
½ onion, chopped
3 cups bean sprouts
4 leaves napa cabbage, thinly sliced
salt to taste
3 sprigs fresh cilantro for garnish

Steps:

  • Place the pork into a mixing bowl and pour in the soy sauce and rice wine. Sprinkle with the white pepper, five-spice powder, and cornstarch. Mix well, then set aside to marinate. Soak the mushrooms in a bowl of cold water for 20 minutes, then pour off the water, cut off and discard the stems of the mushrooms. Slice the mushrooms thinly and reserve. Soak the rice vermicelli in a separate bowl of cold water for 10 minutes, then pour off the water and set the noodles aside.
  • Heat 1 tablespoon of the vegetable oil in a wok or large skillet over medium heat. Pour in the eggs, and cook until firm, flipping once, to make a pancake. Remove the egg pancake, and allow to cool, then thinly slice and place into a large bowl. Heat 2 more tablespoons of the vegetable oil in the wok over high heat. Stir in the garlic and dried shrimp, and cook until the shrimp become aromatic, about 20 seconds. Next, add the pork along with the marinade, and cook until the pork is no longer pink, about 4 minutes. Stir in the carrots and onion, and cook until the carrots begin to soften, about 3 minutes. Finally, add the bean sprouts, napa cabbage, and sliced mushrooms; cook and stir until the vegetables are tender, about 3 minutes more. Scrape the pork mixture into the bowl along with the eggs, then wipe out the wok and return it to the stove over medium-high heat.
  • Heat the remaining vegetable oil in the wok, then stir in the drained rice vermicelli noodles. Cook and stir for a few minutes until the noodles soften, then stir in the reserved pork mixture. Scrape the mixture in to a serving bowl and garnish with cilantro to serve.

TAIWANESE MEEFUN RECIPE - NYT COOKING

Taiwanese Meefun Recipe - NYT Cooking image

Meefun is a stir-fried rice noodle dish very common in Taiwan, and many cooks always claim that their version is the best. Traditionally, meefun has dried shrimp, but this vegetarian rendition gets its umami from dried shiitake mushrooms and gains a little heft from eggs. It’s delicious when first made, but can also be served at room temperature, so it will travel well to a picnic or gathering.

Provided by Sue Li

Total Time 35 minutes

Yield 4 to 6 servings

Number Of Ingredients 13

5 ounces dried rice vermicelli
4 dried shiitake mushrooms
5 tablespoons vegetable oil
2 eggs, lightly beaten
2 large shallots, thinly sliced
Kosher salt
1 large carrot, cut into thin matchsticks (about 2 1/2 cups)
1/4 small green cabbage, shredded (about 2 1/2 cups)
8 ounces baked or smoked tofu, cut into thin matchsticks (about 2 cups)
3 tablespoons soy sauce
1 teaspoon ground white pepper
1/4 cup fresh cilantro, roughly chopped
Chile oil, for serving

Steps:

  • In a medium bowl, cover rice vermicelli in cold water and soak until softened, 5 to 10 minutes. Drain and set aside. Soak dried shiitake mushrooms in warm water until hydrated and softened, about 10 minutes, then drain and slice 1/4-inch thick.
  • Heat 2 tablespoons oil in a large, deep skillet over medium. Add beaten eggs, swirl to create an even layer, and cook until eggs are set and cooked through, about 1 minute. Transfer the cooked eggs onto a cutting board. Let cool slightly, then cut into matchsticks. Set aside.
  • Return the skillet to the stove and raise heat to medium-high. Add remaining 3 tablespoons vegetable oil, the shallots and shiitake mushrooms. Season with salt. Cook, stirring frequently, until the edges of shallots begin to brown, 3 to 4 minutes.
  • Add carrot, season with salt, and cook, stirring frequently, until softened but still crisp, 1 to 2 minutes. Add cabbage, season with salt, and cook, stirring frequently, until slightly wilted, 1 to 2 minutes.
  • Add tofu, soy sauce, drained rice vermicelli and 1 cup water, and cook, stirring frequently, until the noodles absorb the water, 5 to 6 minutes. Season with salt and white pepper, and stir in reserved eggs to combine. Serve topped with cilantro and chile oil.

RICE NOODLE DUMPLINGS WITH SESAME SAUCE RECIPE - SIMPLE ...
There are two kinds of vitamins in tahini, one is vitamin E and the other is folic acid. The calcium content is also relatively high. Each 100 grams of tahini contains 612 mg of calcium, which is much higher than common calcium supplements such as milk and tofu. The appropriate amount of sesame paste is 10 to 20 grams per day. This kind of rice noodle dumplings has a lot of dumplings. It is usually made locally in Qingming. Most of the salty stuffing is mainly pickled vegetables, called "Caiwangbao" (according to the dialect pronunciation, I don’t know which words are.) Sweet stuffing , It's called white dumplings. This year Qingming, I didn't do any of them because of sore wrists. But I bought four bottles of sesame paste and gave away two bottles. I ate some of them and still had a lot of them. One day, when speaking of sesame paste, my husband said to make white dumplings. So, I made it right after I got up yesterday morning, and made six of these 185 grams of noodles, which is just a big rice cooker steaming rack. Breakfast for both of them, with oatmeal porridge. I, a person who doesn't like sweets, suffered from stomach acid in the morning and asked father and son if they were uncomfortable. Hey there! What happened to the father and son? Hi, I can only blame my stomach.
