Egg-in-a-Nest BLT Sandwiches Recipe | Cooking Light image

These toasty handfuls may just be the ultimate combo in the world of sandwiches. The recipe combines some of our favorite things: It's a delicious mash-up of egg-in-a-hole, avocado toast, and a classic BLT.

Yield Serves 4 (serving size: 1 sandwich)

Number Of Ingredients 9

8 (1-oz.) whole-wheat sourdough bread slices, lightly toasted
2 center-cut bacon slices, diced
1 medium ripe avocado
1 tablespoon canola mayonnaise
1/4 teaspoon kosher salt
4 large eggs
1/2 teaspoon black pepper, divided
8 Bibb lettuce leaves (about 2 oz.)
8 tomato slices

Steps:

  • Using a 2 1/2-inch round cookie cutter, cut a hole from the center of 4 bread slices. Discard bread rounds or reserve for another use. Heat a large skillet over medium. Add bacon; cook 6 minutes. Increase heat to medium-high; cook 2 minutes or until crisp. Place bacon on a paper towel-lined plate. Pour bacon drippings into a bowl and reserve. Combine avocado, mayonnaise, and salt in a small bowl; mash to combine. Stir in bacon. Add half of reserved bacon drippings to pan over medium-high. Place 2 cut bread slices in skillet; break 1 egg into each hole. Sprinkle 1/8 teaspoon pepper on each egg. Cook 2 minutes or until eggs begin to set. Carefully turn bread; cook 2 minutes or until eggs are set. Remove from pan. Repeat procedure with remaining half of bacon drippings, cut bread slices, eggs, and pepper. Spread avocado mixture evenly over 4 uncut bread slices. Top each with 2 lettuce leaves, 2 tomato slices, and 1 egg-in-a-nest bread slice.

These are the perfect little side dish for Easter Brunch: Tender-but-crispy potato nests with a luscious baked egg in the middle.

6 whole Medium Russet Potatoes (6 To 8)
Salt And Pepper, to taste
24 whole Large Eggs
Non-stick Cooking Spray

Steps:

  • Preheat the oven to 400 degrees.Bake the potatoes until almost tender (potatoes should still have a little bite) 45 minutes to 1 hour. Allow to cool, and then peel and grate them. Season well with salt and pepper.INCREASE OVEN TEMP TO 425 DEGREES.Spray two muffin pans generously with cooking spray. Scoop 3 to 4 tablespoons of grated potato into each muffin cup. Use your fingers to gently press the sides and bottom in each muffin hole to make a nest (don't press the potatoes firmly against the pan; they should sit lightly in the pan.) Spray again (very lightly!) with cooking spray. Bake for 15 to 20 minutes. Watch and make sure they do not burn. (If they seem like they're not browning, kick up the temp to 450.) Remove when the nests are golden brown.Allow the nests to cool. Crack an egg into each one. Sprinkle with salt and pepper and bake until the whites are set, about 15 minutes. Don't be concerned if some whites bake differently; no two nests will look alike! Remove from the muffin pan with a spoon or fork and serve.
