1 pound edamame ( , either fresh or frozen)
water to cover
3 tsp. salt ( , to taste)
2 star anises
1/4 tsp. Sichuan peppercorn
1 dry chili pepper
1/2 tbsp. light soy sauce ( , optional for a stronger taste)

Steps:

  • Cut the two pods off and then carefully wash the edamame.
  • Then soak the edamame into slightly salted water, soaking for 15 to 30 minutes.
  • Then reload the pot with clean water, add salt, star anise, Sichuan peppercorn and 1 or 2 dried chili peppers. Bring to boil and cook for 10 minutes (crisper taste) to 15 minutes (softer taste) with the lid uncovered.
  • Transfer out immediately and cool down naturally.

1 (16 ounce) package frozen edamame in the pod
2 teaspoons sesame seeds
3 tablespoons white sugar
2 tablespoons soy sauce
2 teaspoons olive oil
1 teaspoon red pepper flakes, or more to taste

Steps:

  • Place edamame pods in a microwave-safe bowl; add 1/4 cup water. Cover and microwave on high until tender, 4 to 6 minutes. Drain.
  • Place sesame seeds in a skillet over medium heat; toast until lightly golden, about 2 minutes. Add sugar, soy sauce, olive oil, and red pepper flakes. Simmer until soy sauce reduces and thickens slightly, about 2 minutes. Add edamame; toss until coated, 1 to 2 minutes.
