3 garlic cloves, minced
1/2 teaspoon fresh ginger, grated
6 cups chicken stock
1 1/2 tablespoons rice vinegar
2 tablespoons soy sauce
1 1/2 cups mushroom caps, sliced thin
1 1/2 cups chicken breasts, cooked and shredded
2 cups spinach leaves, thinly sliced
1 1/2 ounces angel hair pasta, uncooked
1/2 teaspoon salt
1/8 teaspoon white pepper

Steps:

  • In a large soup pot, saute onion and garlic in 2 tsp olive oil for 3 minute.
  • Add ginger for 30 sec.
  • Add stock and mushrooms and bring to a boil.
  • Cover, reduce heat, and simmer 30 minute
  • Stir in chicken, spinach, and noodles; cook for 5 minute.

1 (3 1/2-ounce) package shiitake mushrooms, stems removed and thinly sliced (about 1 1/2 cups thinly sliced shiitake mushroom caps)
2 cups shredded cooked chicken
2 cups thinly sliced spinach leaves
1?½ ounces somen (wheat noodles) or angel hair pasta, uncooked
