EASY CROCK POT BEEF STEW RECIPE - FOOD.COM
This beef stew has a tomato based sauce, giving it a little different flavor. Cooked it up one day and got rave reviews from my husband, who is not a stew fan usually. It's also very, very easy and low in calories. I put it in a calorie calculator and it's only about 100 calories per cup. I like to put it together the night before and put the whole crock in the fridge, then in the morning I just pop it into the warmer and let it go!

Steps:
- Brown the meat in a few tablespoons of olive oil over high heat. Just enough to sear it and seal in the juices.
- Combine the meat and all the ingredients in the crock pot, cook on low at least 6 hours, but can go for 10 or more.

Steps:
- In a large mixing bowl, pat beef dry with a paper towel. Season generously with salt and pepper.
- In a large skillet over medium-high heat, heat oil. Sear meat on all sides until golden brown with a crust, working in batches if necessary, about 10 minutes. Transfer meat to slow cooker.
- Add butter and scrape pan with a wooden spoon to loosen all browned meat bits. Stir in red wine and tomato paste; simmer for 1 minute, then transfer to slow cooker.
- Add potatoes, carrots, celery, onions, sun-dried tomatoes, garlic, rosemary, beef broth, and crushed tomatoes to slow cooker. Season with salt and cook on high until meat is tender, 4 to 5 hours.
- Remove stalk of rosemary. Garnish with parsley before serving.
