50g beef ridge
10g ginger
2 teaspoons light soy sauce
1.5 teaspoons cooking wine
1.5 teaspoons pepper
1.5 teaspoons chicken essence
300g fresh ho fun
10g onions
10g chives
10g green bean sprouts

Steps:

  • Slice the beef ridge thinly and coat with ginger, cooking wine, soy sauce, pepper, chicken essence and marinate for 30 minutes.
  •  Wash and drain the green bean sprouts to the root; slice the onion and chives finely
  • Heat the wok on high and pour in a small amount of oil and add beef slices (take out the ginger before adding )
  •  Add in the ho fun and quickly stir fry, turning the wok as you go
  • Add in the onions, chives, bean sprouts and soy sauce and continue to stir fry

10 oz flank steak
1 lb fresh flat rice noodles
3 stems green onions
0.5 yellow onions
1 handful bean sprouts
1 tbsp cooking oil
1 tsp baking soda
1 tbsp cornstarch
1 tbsp Kikkoman® Oyster Sauce
1 tbsp Kikkoman® Soy Sauce
1 tsp Kikkoman® Tamari
0.25 tsp white pepper
2 tbsp water
1 tsp cooking wine
1 tsp sugar
1 tsp Kikkoman® Tamari
1 tbsp Kikkoman® Soy Sauce
1 tbsp Kikkoman® Oyster Sauce
1 tsp Kikkoman® Sesame Oil
3 tbsp cooking oil

Steps:

  • Cut your flank steak into medium or 1/4 inch slices. Once cut, put the meat into a room-temperature water bath to rinse out the myoglobin.
  • Peel and thinly slice the yellow onion into 1/4 inch thickness. Wash the bean sprouts, drain, and set aside. Wash and chop the green onions into 1 inch long pieces. Use all of the green onions and separate the white parts from the green parts.
  • In a medium-sized bowl, mix the baking soda, cornstarch, oyster sauce, soy sauce, tamari, white pepper, water, cooking wine, sugar, and mix until everything is incorporated and smooth.
  • Drain the meat from the water bath, squeeze out the excess water. Add the meat into the marinade and mix until the meat is fully coated in the marinade and set it aside.
  • Prepare the rice noodles by separating the noodles if you see them stuck together.
  • In a small bowl, mix tamari, soy sauce, and oyster sauce. Once mixed, set it aside.
  • Add cooking oil to the marinated beef to seal the juices in the beef.
  • Fry the yellow onion and the white parts of the scallions for 20-30 seconds or until fragrant.
  • Add the beef and mix. Let everything cook together for 1 more minute. Turn off the heat and add the sesame oil.
  • Taste to adjust the flavors and plate once it's to your taste! This is usually served at the center of the table and everyone can take the amount they want.
