My grandmother made these flaky little pies for the family when I was a child. We ate them as fast as she could fry them up.

Number Of Ingredients 10

2 cup(s) all purpose flour
1 teaspoon(s) salt
1/2 cup(s) shortening or lard
1/2 cup(s) milk
8 ounce(s) dried peaches
2 cup(s) water
1 tablespoon(s) lemon juice
1 cup(s) sugar
1 teaspoon(s) cinnamon
2 tablespoon(s) butter

Steps:

  • Cook dried peaches on medium low heat in 2 cups of water, sugar, lemon juice, butter and cinnamon until peaches are soft and consistency is thick. Approx. 35-45 minutes.
  • Place flour and salt in a medium sized bowl. Cut in shortening until crumbly. Add milk and mix until soft dough forms. Divide dough into 10 portions. Roll each portion into a 6 inch circle. Place 1 heaping teaspoon of filling on half of dough. Fold over and seal edges.
  • In a large electric skillet bring 1/2 inch of oil to 350 degrees. Place 5 pies in oil and fry for 3-5 minutes on each side. Place on paper towel then sprinkle with sugar.

1/2 C. diced peaches
1 1/2 c. sugar, divided
1 unbaked 9" pie shell
2 tbsp. all purpose flour
2 tbsp. butter, softened
3 Large eggs, separated
1 c. lowfat milk
2 teaspoon vanilla, divided
Healthy pinch of salt

Steps:

  • Cook peaches as directed on package. Drain and mash. Stir in 1/4 c. sugar. Cold. Spread in pie shell and set aside. Combine 1 c. sugar, flour and butter; mix well. Beat in egg yolks, lowfat milk, 1 tsp. vanilla and salt. Pour over peaches. Bake at 450 degrees for 10 min; reduce heat to 325 degrees and bake 25 min or possibly till knife inserted in center comes out clean. Beat egg whites till stiff, gradually beat in remaining 1/4 c. sugar and 1 tsp. vanilla. Spread over pie. Bake at 325 degrees about 12 min. Cold slightly before serving.
