Number Of Ingredients 1

1 tsp olive oil 2 4 oz skinless salmon fillets 2 tbsp citrus dressing 1 tsp minced garlic 4 thin slices of lemon 4 thyme sprigs

Steps:

  • 1. Heat oven to 425°F.   2. Line a baking pan with foil. Brush foil with one teaspoon olive oil.   3. Place two four ounce skinless salmon fillets, skinned sides down, in pan.   4. Stir two tablespoons citrus dressing with one teaspoon minced garlic. Spoon over salmon; top with four thin slices lemon and four thyme sprigs.   5. Roast until cooked through, 10 to 12 minutes. Let cool.  6. Discard thyme. Transfer one fillet to a container and keep chilled. Freeze second fillet for a future week.

Number Of Ingredients 8

2 tbsp citrus dressing 1 cup black beans
rinsed and drained 1 tbsp cilantro
chopped 2 tbsp scallion
chopped 1/4 tsp cumin 2 cups romaine
chopped 1 cup red bell pepper
chopped 1/2 cup cucumber
chopped 1/4 cup mango
chopped 1 tbsp pumpkin seeds

Steps:

  • 1. Get a mason jar or other similar container. Spoon citrus dressing on the bottom first. 2. Then mix one tablespoon of cilantro and scallions and 1/4 teaspoon cumin in with the black beans and pour in the jar.  3. Top with romaine, red bell pepper, cucumber, and mango.  4. Finish off with a sprinkling of one tablespoon of both scallions and pumpkin seeds.  5. Keep chilled. Toss or shake when ready to eat.
