This easy and delicious Pipeable Cream Cheese Frosting is the BEST! Wonderful cream cheese flavor and perfect for piping!

Number Of Ingredients 4

1 cup (2 sticks) (226g) unsalted butter, softened (do not soften in microwave)
3 (8 ounces) (226g) packages full fat cream cheese, (total 678g) cut into 1 inch pieces and softened.....do not use reduced fat cream cheese or cream in tub containers (do not soften in microwave)
3 cups (343g) powdered sugar
2 teaspoons (8g) vanilla extract

Steps:

  • Put the softened butter in the bowl of your mixer and mix until smooth.
  • Add the pieces of softened cream cheese to the mixing bowl. The cream cheese should be soft enough that it combines easily into the butter/powdered sugar mixture. Beat on low/medium speed about 1 minute or until the cream cheese is blended in.
  • Add the powdered sugar and vanilla. Beat on Medium speed for 2 to 3 minutes (a bit longer if using a hand mixer). Scrape the bowl mid way through. Do not over beat.
  • Makes 6 cups
  • Use immediately or refrigerate. If beaten too long it my become too soft. If this happens, just refrigerate a short time and let it firm up.

Nobody would guess that this amazing lemon cake recipe all starts with a simple cake mix! So moist and lemony!

Number Of Ingredients 10

1 box (15.25 oz.) white cake mix, sifted (Any mix without pudding in the mix)
1 cup (114g) all purpose flour (plain in the UK)
1 cup (200g) sugar
1/2 box (4Tablespoons, (48g) instant lemon pudding (we used Jell-O brand)
3 large eggs
1 1/3 cups (322g) water
1 cup (242g) sour cream (we use full fat sour cream)
1 Tablespoon (12g) lemon extract
1/2 teaspoon (2g) vanilla extract
zest of one lemon

Steps:

  • Preheat the oven to 350 degrees. Grease and flour three 8x2 inch round cake pans.
  • In the bowl of your mixer, add the dry ingredients and whisk at least 30 seconds to blend.
  • Add the remaining ingredients to the bowl and mix on medium speed for 1 minute. Scrape the sides and bottom of the bowl and mix for 1 more minute. If you are using a hand mixer, mix for a bit longer.
  • Pour into prepared pans and bake at 350 degrees for 25 to 30 minutes. Check at 25 minutes, if a toothpick inserted into the center comes out clean or with just a few crumbs attached, it is done.
  • Cool in the pans 5 to 10 minutes then turn out.
  • Makes 7 1/2 cups batter
  • Works well for cupcakes

  • After 15 minutes has passed, when the glaze has been absorbed, place your cake plate/pedestal upside down against the cake pan and then flip it all as one so that the cake plate is now right side up with the inverted pan on top. Remove the can pan to reveal the cake.

The only adjustment I made was add a touch bit more of lemon extract and then I followed it with a lemon glaze once the cake was cooled (2 TBSP of melted butter, about a cup and half of powdered sugar, dash of lemon extract, and 3 good squirts of concentrate lemon juice; mix and pour/drizzle over cooled cake).
