These oats are sweetened with only dates and berries, but the addition of vanilla extract helps convey sweetness with no added sugar. Steel-cut oats are key here since the quick-cooking kind would turn out too mushy. The double dose of strawberry in these oats serves two purposes: The fresh berries offer juicy goodness, while the freeze-dried ones carry more concentrated flavor.

2 cup(s) Uncooked steel cut oats
10 item(s) Medjool dates pitted and chopped
1.5 cup(s) Freeze-dried strawberries about 1 1/2 oz
1 tsp Vanilla extract
1 tsp Kosher salt
1 pound(s) Strawberries hulled and chopped, divided

Steps:

  • Coat a 6-quart (or larger) slow cooker with cooking spray. In the slow cooker, stir 3½ cups water, the almond milk, oats, dates, freeze-dried strawberries, vanilla, and salt. Reserve 1 cup of the chopped fresh strawberries. Stir the remaining chopped strawberries into the oats.
  • Cover the oats and cook on Low until thick and tender, about 8 hours. If the oats seem loose, stir them well, scraping the sides and bottom of the bowl. Ladle the oats into bowls. Top with the reserved chopped strawberries. Store any leftovers in the refrigerator for up to 1 week.
  • Serving size: 1 generous cup oats and 2 tbsp chopped strawberries

This recipe comes from the back of a marshmallow package, I make this when I am short on time, it is very easy to prepare, and the results are delicious.(note: this can be made using a homemade white cake recipe)

1 cup mini marshmallows
2 (285 g) packages frozen strawberries, thawed
1 (85 g) package strawberry Jell-O gelatin dessert
1 (18 ounce) package white cake mix
1 cup water
1/3 cup oil
2 eggs

Steps:

  • Set oven to 350 degrees.
  • Grease a 9x13-in baking pan.
  • Sprinkle the marshmallows evenly over the bottom on baking pan.
  • In a bowl, combine thawed strawberries and Jello gelatin; set aside.
  • In a large bowl, blend cake mix with water, oil and eggs, (or whatever the cake mix calls for),beat for 2 mins, until moistened.
  • Pour the cake batter over the marshmallows in the bottom of pan.
  • Spoon the strawberry/gelatin mixture evenly over batter.
  • Bake for 35-40 mins, or until cake tests done.
  • Cool completely.
  • Invert cake to a serving dish.
  • Serve with whipping cream if desired.
