WONTON NOODLE SOUP (云吞面) | MADE WITH LAU

Wonton Noodle Soup (云吞面) | Made With Lau image

Learn how to make this classic Cantonese comfort food at home!

Provided by Made With Lau

Total Time 30 minutes

Prep Time 15 minutes

Cook Time 15 minutes

Yield 4

Number Of Ingredients 12

15 oz wonton noodles
30 wontons
12 oz bok choy
1 piece green onion
8 pieces shrimp
14 oz chicken broth
4 cups water
1 tsp salt
1 tbsp olive oil
1 tbsp fish sauce
1 tsp sesame oil
0.25 tsp white pepper

Steps:

  • We'll start by washing and cutting our bok choy into quarters along the stem.
  • Set the stove to high heat and bring a pot of water to a boil. We'll want to use more water so that the noodles cook faster, which leads to a more chewy, springy texture.
  • For our broth, we'll add water and chicken broth to the pot, and bring it to a boil.
  • We'll dump the shrimp in as we start plating the bok choy on top of the noodles.
  • We have a whole recipe and video on this, but if you're starting with raw wontons, you'll boil them for about 3-5 minutes until they start floating. We have some additional pro-tips for cooking in our wonton video so be sure to check the video out if you haven't seen it already.
  • Transfer the wontons onto the bowl of noodles, and carefully pour in the soup broth. Garnish with green onions.

Provided by Elaine

Categories     Breakfast    Soup

Total Time 50 minutes

Prep Time 40 minutes

Cook Time 10 minutes

Yield 2

Number Of Ingredients 23

1/2 pound wonton wrappers
1 small bunch of vegetable leaves ( , optional (lettuce, bok choy or other green vegetables))
2 tablespoon finely chopped green onion
1/2 tablespoon grated ginger
1 egg
1 cup ground pork
1/2 cup chopped shrimp
½ teaspoon black pepper powder
½ tablespoon sesame oil
1 tablespoon oyster sauce
salt to taste
1 tablespoon sesame oil
1 tablespoon soy sauce
1 teaspoon chili oil
1 teaspoon black vinegar
1 teaspoon smashed garlic
chopped spring onion
salt to taste
1 teaspoon dried sea shrimp
1 teaspoon sesame oil
chopped spring onion
1 small pieces of dried seaweed
salt to taste

Steps:

  • To make the filling: In a large bowl, well combine all the ingredients together. Then stir your meat filling in one direction until the filling becomes sticky.
  • To assemble the wontons: Put the wonton wrapper in the center of the left hand. Spoon about 1 teaspoon of meat stuffing (or slightly more if you want)onto the center of the wrapper. Moisten the edges of the wonton wrappers with water. Fold one corner of the wrapper over the opposite corner to make a triangle just like the picture shows. Hold the wrapper with both hands, curl the corner on the right hand in firstly and then the curl the corner on the left hand to seal with another corner. You can also change the sequence. But make sure that you press them firmly.
  • To prepare your serving bowls: in separate serving bowls, mix all the seasonings and set aside.
  • Boil water in a wok. Put the wonton in to cook for about 5 minutes. And add your vegetable leaves prepared to cook in the last 1 minute.
  • scoop around 1/2 bowl of the boiling water in serving bowl (or you can use stock), and then place wonton in too.

TOP SECRET RECIPES | SOUP NAZI'S INDIAN MULLIGATAWNY SOUP
Elaine: "Do you need anything?"Kramer: "Oh, a hot bowl of Mulligatawny would hit the spot."Elaine: "Mulligatawny?"Kramer: "Yeah, it's an Indian soup. Simmered to perfection by one of the great soup artisans in the modern era."Elaine: "Oh. Who, the Soup Nazi?"Kramer: "He's not a Nazi. He just happens to be a little eccentric. You know, most geniuses are."Kramer was right. Al Yeganeh—otherwise known as The Soup Nazi from the Seinfeld episode that aired in 1995—is a master at the soup kettle. His popular soup creations have inspired many inferior copycats in the Big Apple, including The Soup Nutsy, which was only ten blocks away from Al's original location on 55th Street. Yeganeh's mastery shows when he combines unusual ingredients to create unique and delicious flavors in his much-raved-about soups. In this one, you might be surprised to discover pistachios and cashews among the many vegetables. It's a combination that works. I took a trip to New York and tasted about a dozen of the Soup Nazi's original creations. This one, the Indian Mulligatawny, was high on my list of favorites. After each daily trip to Soup Nazi headquarters (Soup Kitchen International), I immediately headed back to the hotel and poured samples of the soups into labeled, sealed containers, which were then chilled for the trip back home. Back in the lab, portions of the soup were rinsed through a sieve so that ingredients could be identified. I recreated four of Al's best-selling soups after that trip, including this one, which will need to simmer for 3 to 4 hours, or until the soup reduces. The soup will darken as the flavors intensify, the potatoes will begin to fall apart to thicken the soup, and the nuts will soften. If you follow these directions, you should end up with a clone that would fool even Cosmo Kramer himself. Update 2/6/18: The recipe can be improved by doubling the curry (to 2 teaspoons) and reducing the water by half (to 8 cups). Cook the soup for half the recommended time or until it's your desired thickness.  Check out my other Soup Nazi copycat recipes here. Source: Top Secret Recipes Unlocked by Todd Wilbur.
