Rump roast is slow-cooked to tender carne-asada perfection and seasoned with sweet onions, garlic and spices. If you prefer a little more heat, increase the cayenne pepper to suit your taste.

1/3 cup lime juice
1/4 cup extra-virgin olive oil
2 tablespoons white vinegar
1 teaspoon ground cumin
1 teaspoon sweet Hungarian paprika
1 teaspoon chili powder
1/2 teaspoon ground red pepper (cayenne)
Salt and pepper to taste
1 sweet onion (Maui or Walla Walla), cut into chunks
1 beef rump roast (2 lb)
3 cloves garlic, finely chopped

Steps:

  • In small bowl, beat lime juice, oil, vinegar, cumin, paprika, chili powder, red pepper, salt and pepper.
  • In 4- to 6-quart oval slow cooker, arrange onion chunks. Place beef over onion. Pour lime juice mixture over beef. Using pastry brush, brush beef with any remaining mixture from bowl. Sprinkle garlic over top.
  • Cover; cook on Low heat setting 8 to 9 hours.
  • Remove beef from slow cooker; place on large plate. Using 2 forks, shred beef. Return beef to slow cooker; stir well to mix beef with sauce. Serve immediately.

1/2 teaspoon Black pepper
1 teaspoon Onion powder
1 teaspoon Garlic powder
1 teaspoon Dried oregano
2 tablespoons Olive oil
1/4 cup Orange juice about 1 orange
1/4 cup Lime Juice about 1 lime
1/4 cup Lemon Juice about 1 lemon
1/4 cup Soy sauce
2 tablespoons White Vinegar
Pico de Gallo topping
Corn Tortillas
Avocado topping
Cotija Cheese crumbled

Steps:

  • "1) In a small bowl, whisk together spices, then stir in the olive oil. 2) Rub half of the spice mixture on one side of the flank steak. 3) Flip over and rub the rest of the spice mixture on the other side. 4) Whisk together the orange, lemon and lime juices, and add the soy sauce and vinegar. 5) Grease a crockpot and pour in half of the juice mixture. 6) Place the steak in the crockpot and pour in the rest of the juice, over the top of the meat. 7) Cover and cook on low for 6 hours. 8) Once cooked, remove steak from crockpot and let sit for 5-10 minutes. 9) Using a serrated knife, thinly slice the steak against the grain. 10) Gently place steak back in crockpot and mix with juices. 11) Serve with corn tortillas, pico de gallo, avocado and Cotija."
