Steps:

  • 1. Heat oven to 400°F. Oil 3-quart or 9- by 13-inch casserole dish. Cook pasta per package directions. 2. Meanwhile, heat 2 tablespoons oil in large skillet on medium. Add onion and cook, covered, stirring occasionally, until tender, 6 to 8 minutes. Add mushrooms and cook, tossing occasionally, until tender, 5 to 6 minutes. Stir in garlic and thyme and cook 1 minute. Transfer to large bowl and toss with spinach and parsley. 3. Wipe out skillet and heat remaining 2 tablespoons oil on medium. Sprinkle flour over top and cook, stirring, 1 minute. Gradually whisk in milk. Simmer, whisking often, until thickened, 4 to 5 minutes. Remove from heat and add Gruye`re, cayenne, 3/4 teaspoon salt, and 1/4 teaspoon pepper; stir until cheese melts and sauce is just smooth. 4. Fold turkey and pasta into cheese mixture and toss to coat. Fold in spinach mixture. 5. Transfer to prepared dish. Bake until heated through, 10 to 12 minutes.

  • Heat oven to 375 degrees F. Lightly butter a shallow broiler-proof 2-quart casserole dish. Cook the pasta according to package directions. Drain the pasta and return it to the pot. Meanwhile, heat 1 tablespoon oil in a large skillet over medium-high heat. Add the mushrooms and 1/4 teaspoon salt and cook, tossing occasionally, until golden brown, 4 to 5 minutes; transfer to a plate. Reduce heat to medium, and add the remaining tablespoon oil along with the onion, celery, and 1/2 teaspoon each salt and pepper and cook, covered, stirring occasionally, until the vegetables are tender, 6 to 8 minutes. Sprinkle the flour over the vegetables and cook, stirring, for 1 minute. Stir in the wine and then the broth and bring to a boil. Reduce heat and simmer, stirring occasionally, until slightly thickened, 3 to 4 minutes. Remove from heat. Add the cream cheese, lemon zest and juice, and 3/4 cup Parmesan and stir until the cream cheese melts. Add the sauce to the pasta along with the turkey and toss to coat, then fold in the mushrooms, peas, and parsley. Transfer the mixture to the prepared baking dish, sprinkle with the remaining 1/4 cup Parmesan and cover with foil. Bake until heated through, 15 to 18 minutes. If desired, uncover and broil until beginning to brown, 2 to 3 minutes.
