RECIPE: TOMATO TORTELLINI SOUP - KITCHN
Steps:
- Melt the butter in a Dutch oven over medium heat. Add the onion, garlic, salt, and pepper and cook, stirring occasionally, until tender, about 6 minutes.
- Stir in the vinegar. Add the crushed tomatoes, broth, cream, and bay leaves, and bring to a boil. Reduce the heat to a simmer and simmer for 5 minutes. Add the tortellini and simmer until cooked through, 5 to 6 minutes more (check at 3 minutes for fresh tortellini). Remove from the heat, remove and discard the bay leaves, and stir in the basil. Ladle into bowls and top with Parmesan cheese and more basil, if desired.

- In 10-inch nonstick skillet, cook sausage 6 to 8 minutes over medium-high heat until no longer pink; drain. Transfer to 5- to 6-quart slow cooker.
- Add carrots, onion, garlic, chicken broth, salt and pepper flakes to slow cooker. Cover; cook on High heat setting 3 to 4 hours or until vegetables are tender.
- Stir in tortellini; cook covered on High heat setting 15 minutes. Stir in spinach and whipping cream; continue cooking 5 to 10 minutes or until spinach is wilted and mixture is heated through. Garnish with grated Parmesan before serving.
