6 oz. (2 1/2 cups) uncooked rainbow rotini (spiral pasta)
2 cups frozen broccoli
1 cup nonfat sour cream
2 teaspoons all-purpose flour
1/2 cup skim milk
1 1/2 cups diced cooked chicken breast
3/4 teaspoon dried basil leaves
1 (4.5-oz.) jar sliced mushrooms, drained
4 tablespoons grated Parmesan cheese

Steps:

  • In large saucepan or Dutch oven, cook rotini to desired doneness as directed on package, adding broccoli during last 5 minutes of cooking time.
  • Meanwhile, in medium saucepan, combine sour cream and flour; blend well. Stir in milk. Cook over medium heat, stirring constantly, until hot but not boiling. Stir in chicken, basil, mushrooms and 3 tablespoons of the cheese. Cook until thoroughly heated.
  • Drain rotini and broccoli; return to saucepan. Add chicken mixture; toss to coat. Place mixture in serving dish or on serving platter; sprinkle with remaining 1 tablespoon cheese.

This is a great quick meal; the chicken and sauce can be prepared in the time it takes to cook the pasta. You can add more cream or less pasta if you like it creamier. Try ziti or farfalle pasta to add even more variety to this recipe. The leftovers don't heat very well, so eat it all up the first time!

1 (12 ounce) package rotini pasta
2 tablespoons butter
1 pound skinless, boneless chicken breast halves - cut into 1/2 inch cubes
3 cloves garlic, minced
½ teaspoon ground black pepper
2 teaspoons dried basil
1 cup heavy cream
¼ cup grated Parmesan cheese

Steps:

  • In a large pot with boiling salted water cook rotini pasta until al dente. Drain.
  • Meanwhile, in a large skillet melt the butter or margarine. Add the chopped chicken and garlic, saute until lightly brown and juices run clear. Stir in the ground black pepper, dried basil, heavy cream, and grated Parmesan cheese. Bring to a boil and simmer for 3 to 4 minutes.
  • Toss drained pasta with basil sauce and serve immediately.

  • Boil pasta per package directions. Drain (do not rinse!) and put back into pot. Add about a tablespoon of olive oil and then cover to keep warm. While the pasta is boiling chop chicken and place in zip top storage bag. Add breadcrumbs shake and use your hands to press crumbs into chicken until completely coated and most of the crumbs are no longer loose. Heat olive oil over medium heat in a large frying pan. Add chicken and toss occasionally so that all sides get browned. About 7 minutes in add garlic and toss. Try to toss this instead of â??stirringâ?? it, this will help the breadcrumbs stay attached to the chicken. Cook for about 3 more minutes (check largest piece to make sure its done) and remove chicken from pan. If there is a ton of oil left in the pan pour most of it out, if not, add chicken broth, cream, salt and pepper. Bring to a boil then add cheese, bring back to a boil and cook, whisking occasionally for 5 minutes. Add basil and boil, whisking occasionally, for another 5 minutes. Pour over pasta and stir until combined. Garnish with basil.

This comes from a Pam Anderson recipe. I love creamy pastas like alfredos, etc... but don't like all the fat. This recipe is a great solution. By using 2 percent evaporated milk, instead of heavy cream, the fat content is cut considerably. The flavor and consistency is still wonderful, in my opinion. I love this recipe because: it's lower in fat; you can use left-over chicken (or cooked rotisserie chicken); cooking the broccoli in the same pot as the pasta saves an extra pot to wash, it's an easy one-dish meal! There are many variations you could try with this recipe, too. Notes: 1.this recipe calls for diced tomatoes - if you'd prefer a more traditional alfredo-type sauce, I think you could probably omit the tomatoes and it would be just fine. 2. Also, if you like your pasta spicier you could add more red pepper flakes than the amount called for. 3. I find it very helpful to have all my ingredients prepped/chopped and ready before I start cooking - especially for this recipe. 4. Make sure you reserve about a cup of the pasta cooking water - it helps to thin out the finished product, if necessary. Have fun and enjoy!
