1/2 cup Water
2 lbs boneless chicken breast
8 ounce cream cheese (cut into 6-8 pieces)
1 packet ranch seasoning
1 cup Cheddar cheese (shredded)
6 - 8 slices cooked bacon (crumbled)
2 green onions (diced (optional))

Steps:

Pour water in the Instant Pot.
Place chicken and cream cheese in an even layer and sprinkle ranch seasoning over the top.
Using the display panel select the MANUAL or Pressure Cook function*. Use the +/- buttons and program the Instant Pot for 15 minutes.
When the time is up, quick-release the remaining pressure.
Carefully remove the chicken and shred.
Using the display panel select CANCEL and then SAUTE . Whisk the cream cheese mixture thoroughly to break up any remaining cream cheese pieces.
Return chicken to pot along with cheddar cheese. Mix thoroughly and then turn the pot off.
Sprinkle with bacon and green onions and serve.

Ingredients

1 1/2 cups dry elbow pasta
6 sliced of bacon, cut into small pieces
1 white onion, diced
1 cup sour cream
1 cup heavy cream, or half and half
4oz softened cream cheese
10oz can cream of chicken soup
2 1/2 tbs ranch seasoning
1/2 tsp black pepper
1/4 tsp salt
2 cup cooked chicken (I use a rotisserie chicken)
1 1/2 cup shredded sharp cheddar cheese
3 green onions, sliced

Steps:

Preheat oven to 350 degrees.
To a large pot of boiling water add the elbow pasta and cook according to the box directions. Drain and set aside.
To a skillet add the bacon and cook threw. Remove the bacon the bacon to a separate plate lined with paper towels, set aside. Save 2 tbs of the bacon grease in the skillet (or you can use 2 tbs of butter) add the diced onion and cook for 5-7 minutes or until the onion is soft. Set to the side.
To a large bowl add the sour cream, heavy cream, cream cheese, cream of chicken and ranch seasoning mix the ingredients together.
Now add in the pepper, salt, chicken, pasta, onion, 1/2 of the cooked bacon and 1/2 cup of the cheese stir to combine.
Grease a 9x13 baking dish with non-stick spray, pour the casserole in. Sprinkle the rest of the cheese on top with the remaining bacon and sliced green onions. Bake for 35 minutes. Enjoy!

Place chicken in a pot of water and boil on medium-low heat for 30 to 40 minutes. Remove chicken from pot and allow to cool slightly. Keep broth in pot. Melt 2 tablespoons butter in a large skillet. Throw in mushrooms, add 1/4 cup white wine, and sprinkle with salt and pepper. Cook over medium heat for 8 to 10 minutes, or until liquid has totally evaporated. Remove mushrooms from skillet. Set aside. Bring broth to a boil. Break spaghetti into thirds (shorter pieces). Add spaghetti pieces to boiling broth and cook. Drain when al dente. Remove meat from bones and shred until you have 2-plus cups of shredded chicken.Return large skillet to medium-low heat. Add 6 tablespoons butter. Sprinkle flour over butter, whisking to combine. Cook for 1 or 2 minutes. Pour in 2 cups broth and whisk to combine. Pour in milk, additional 1/4 cup wine, salt and pepper to taste, then cook and bubble until thick. Turn off heat, add Parmesan cheese, and stir. Add mushrooms, chicken, and chopped olives. Stir to combine and check seasonings. Add cooked spaghetti and stir. Turn into a 9 x 13 casserole pan. Bake at 350 degrees or until golden brown and bubbly. Serve with salad and warm, crusty bread.
