Ham Biscuit Sandwiches With Apricot Mustard - Country Living image

Whether served for Easter brunch or Sunday morning family breakfast, these ham biscuit sandwiches with apricot mustard take standard ham sandwich recipes to a delicious new level.

all-purpose flour, spooned and leveled, plus more for work surface

1 1/2 tbsp.

baking powder

3/4 tsp.

baking soda

1 1/2 tbsp.

sugar

1 tsp.

kosher salt

1/2 c.

(1 stick) cold unsalted butter, cut into pieces, plus 2 teaspoons melted

1 3/4 c.

cold buttermilk

Sliced ham 

Apricot Mustard (below), sliced extra-sharp Cheddar, and lettuce leaves, for serving

1/2 c.

apricot jam

2 tbsp.

whole-grain mustard

1 tbsp.

Dijon mustard

Steps:

  • Preheat oven to 450°F. Whisk together flour, baking powder, baking soda, sugar, and salt in a bowl. Cut in cold butter with a pastry blender or fork until coarse crumbs form.  Make the biscuits: Stir buttermilk into flour mixture until just combined. Turn out dough onto a well-floured work surface and knead lightly 3 or 4 times. Pat into a 3/4-inch-thick rectangle. Cut into 9 squares and transfer to a baking sheet, placing close together but not touching. Brush with melted butter. Bake until golden brown, 18 to 20 minutes. Halve biscuits and top with ham. Serve with Apricot Mustard, Cheddar, and lettuce alongside. Make the Apricot Mustard: Whisk together apricot jam, whole-grain mustard, and Dijon mustard in a bowl. Makes 2/3 cup.

My grandfather came from Hungary when he was three. My grandmother made this recipe for a taste of home for him. It is Americanized, but still delicious. He added sour cream to his, while we kids we ate it plain. The consistency grandma made was like a casserole or stew rather than a soup.

2 pounds lean ground beef
1 large yellow onion, chopped
3 cloves garlic, chopped
3 tablespoons paprika, or to taste
2 teaspoons ground black pepper, or to taste
2 teaspoons seasoned salt, or to taste
2 (15 ounce) cans tomato sauce
1 (8 ounce) can tomato paste
1 cup water, or as desired
2 cups uncooked elbow macaroni

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef, onion, and garlic in the hot skillet until browned and crumbly, 5 to 7 minutes.
  • Season beef with paprika, black pepper, and seasoned salt. Stir tomato sauce and tomato paste into the beef mixture until smooth. Pour water over the beef; add macaroni and stir.
  • Bring the liquid to a boil, reduce heat to medium-low, and simmer mixture, adding water as needed to maintain your desired consistency, until the macaroni is tender yet firm to the bit, about 20 minutes. Adjust seasoning before serving.

Tip terrine mold (holding terrine) to drain excess liquid, then invert a cutting board over terrine, reinvert terrine onto cutting board, and gently wipe outside of terrine (bacon strips) with a paper towel. Let terrine stand at room temperature for 30 minutes before serving, then transfer to a platter if desired and cut, as needed, into 1/2-inch-thick slices.
