- In a large bowl, stir shortening and water until shortening is melted. Gradually stir in flour and salt until a very soft dough is formed; cover and refrigerate for 1-1/2 hours. , Cut potatoes and rutabagas into 1/8- or 1/4-inch cubes; do not make cubes too large or they will not cook properly. Gently combine ground beef and pork; crumble meat. In a large bowl, combine potatoes, rutabagas, onions, meat mixture and seasonings. , Divide dough into 12 equal portions. On a floured surface, roll out 1 portion at a time into a 8-in. circle. Mound 1-1/2 to 2 cups filling on half of each circle; dot with 1 teaspoon butter. Moisten edges with water; carefully fold dough over filling and press edges with a fork to seal. , Place on ungreased baking sheets. Cut several slits in top of pasties. If desired, brush with cream or beaten egg. Bake at 350° until golden brown, about 1 hour. Cool on wire racks. Serve hot or cold. Store in the refrigerator.

- Cut the dough into 6 even pieces, about 5 ounces each, and form into balls. Make sure the dough is cold for easier handling. Flour a work surface and roll out each ball of dough into an 8-inch circle. Evenly divide the filling (about 3/4 cup per pastie) on one half of each dough circle. Fold the dough over to cover the mixture and crimp the edges using a fork. Slice 3 small slits on top of each pocket. This prevents steam from building up and splitting the dough. - Preheat the oven to 200ºC/400ºF/gas 6. Line a large baking tray with greaseproof paper.
- Peel and finely chop the onion, then trim and finely chop the celery. Heat 1 tablespoon of olive oil in a large frying pan over a medium-high heat, then add the chopped veg. Cook for 10 to 15 minutes, or until golden. Meanwhile, finely chop the mushrooms.
- Peel and crush in the garlic, then add the chopped mushrooms. Cook for a further 5 minutes, or until the mushrooms start to soften. Add the mustard and wine, season with salt and pepper, then reduce the heat to low. Cook for 5 to 10 minutes, or until all the liquid has boiled and bubbled away. Set aside to cool.
- Add the cooled mushroom mixture and breadcrumbs to a large bowl. Pick, finely chop and add the parsley leaves, then pick in the thyme leaves. Stir well to combine, then season to taste.
- Cut the sheets of puff pastry in half lengthways so you have four equal-sized pieces. Spoon a quarter of the mushroom mixture along the middle of one length of pastry, moulding it into a long sausage shape with the back of a spoon.
- Brush the almond milk along the pastry edges, then carefully fold one of the long sides of the pastry up over the filling. Press the edges to seal, then crimp with a fork. Repeat with the remaining ingredients until you have four long rolls, then cut each length into four pieces.
- Place the rolls on the prepared baking tray, brush with the almond milk and sprinkle over the sesame seeds. Pop on the bottom shelf of the hot oven for 25 to 30 minutes, or until golden, then serve.

- To make the chicken pot pie filling, melt 2 tablespoons butter over medium heat in a large pot. Add the chopped celery, carrot, potato, onion, dried thyme, dried rosemary, and salt. Saute until soft, about 15 minutes. Add the peas and diced chicken to the pot.Add the remaining 4 tablespoons butter to the softened vegetables, and let it melt completely. Add the flour and stir to distribute, then add the chicken stock. Bring the mixture to a boil, then back down to a simmer, and let it bubble for five minutes until it has thickened. Adjust the seasoning if desired, then let this mixture cool to room temperature, then chill completely in the fridge, for at least 3 hours.In the meantime, make the pie crust. Pulse the flour and salt together in a food processor 10 times, to combine. Add the cubed butter and pulse about 20 times until the butter is chopped up into pea-sized pieces. Drizzle in the ice water and pulse until the dough comes together. You want to stop adding water when it looks crumbly, but if you pinch a bit of the dough, it holds together. Dump the dough out onto the counter, bring it together into a flat disk with your fingers, then wrap in plastic. Chill in the fridge for two hours.Once the filling and pie crust are chilled, we’re ready to bake. Preheat the oven to 400ºF.Roll the pie crust out to about 1/8 inch thick, and cut 6-inch wide circles. If you re-roll the scraps, you should be able to get 8 circles total.Place a few spoonfuls of filling into each circle, then enclose by crimping with your fingers. Repeat with the remaining ingredients, then place four pies each on two sheet pans. Cut vent slits into each pie, then brush with egg wash. Bake for 25–30 minutes until golden brown and crusty. Let the pies cool for at least 5 minutes, then enjoy! Note: You can use your own pie crust recipe or store-bought pie crust, if desired.

Heat the butter in a large saucepan over medium heat and fry the onion and garlic until softened. Add the mince and Vegemite and fry until the mince is well browned.
Add the potatoes, carrot and pumpkin and fry for about 5 minutes, stirring frequently. Add the thyme, chicken stock and Worcestershire sauce and season very well with salt and pepper.
Cover with a lid and cook for a further 5-10 minutes until the vegetables are softened, stirring occasionally. Stir through the parsley and allow to cool to room temperature. Adjust for seasoning.
Remove the puff pastry from the freezer and allow to thaw. Using a dinner plate as a guide, cut each pastry sheet into a large circle.
Place about a cup of filling into the centre of each pastry circle and fold into a half-moon shape. Crimp along the side of the pastry to seal in the filling without any air pockets. Repeat for the remaining filling.
Heat your oven to 200C. Place the pasties on a lined baking sheet and brush with beaten egg. Bake for 25 minutes or until well browned. Serve with tomato sauce.
