You don’t need an expert to tell you that watermelon is just about the most refreshing thing you could possibly eat in the middle of summer. Luckily, there are many worthy and refreshing things to do with watermelon that are somewhere between simple slicing and full-blown cooking.

1 pound watermelon
2 tablespoons sugar
2 tablespoons lime juice

Steps:

  • Cut the watermelon into small chunks (discarding the rind), and put them in a blender with the sugar and lime juice. Process until smooth, adding enough water (or fruit juice) so that the mixture liquefies. Pour into popsicle molds, and freeze.

These Easy Key Lime Popsicles are refreshing, sweet and slightly tangy, and have a perfect balance of flavors. Made with only three ingredients, these frosty treats will keep you cool and your kids happy all summer long.

Number Of Ingredients 4

2 cups (480 ml) Simply Limeade® ((see notes))
½ cup (145 g) Sweetened Condensed Milk
12 oz ( 340 g) vanilla Greek yogurt (( I used whole milk))
2 teaspoons lime zest ((optional))

Steps:

  • Combine all ingredients together in a large measuring or a mixing bowl, preferably one with a pour spout. Whisk until well combined and smooth.
  • Pour the mixture into your popsicle molds and insert the popsicle sticks.
  • Freeze for about 5 - 6 hours or overnight (best).
  • To unmold, turn the popsicle molds sideways and run them under warm water for 5 -15 seconds.
