Oven Roasted Chicken Skewers | Cook Smarts image

All foods are better on a stick. Skewers are an easy way to make dinner more festive and fun. The combination of chicken, zucchini, and red peppers are a colorful and healthy combination for easy weeknight cooking. For extra flavor, we use our creamy and herbaceous avocado chimichurri again over our simple skewers.

1 lb Skin/boneless chicken breasts
2 Zucchini, cubed
2 Red peppers, squared
1/2 Red onions, chopped
1/2 bunch Cilantro, bottom stems chopped off
1/4 bunch Parsley, bottom stems chopped off
2 cloves Garlic, peeled
1 bulb Shallots, peeled
2 Tbsp Capers
1 Tbsp Lime juice
2 Tbsp Olive oil
1 Avocado (medium), ripe
16 Skewers
3 Tbsp Olive oil
1 cup Quinoa

Steps:

  • Preheat oven to 400F (204C) degrees
  • Soak skewers in water
  • Toss zucchini, red peppers, and red onions with oil. Sprinkle generously with salt and pepper
  • Assemble skewers alternating chicken, zucchini, red peppers, and red onions and place onto a sheet pan sprayed with cooking oil
  • Roast for 15 to 20 minutes until chicken is cooked through
  • If quinoa is cooked from last night, heat it up. Otherwise combine quinoa with 1 3/4 cups (411 ml) of water. Add in a generous dash of salt. Bring to a boil covered. Lower heat, keep covered, and cook until liquid is absorbed, 8 to 10 minutes
  • Spoon sauce over skewers and enjoy over quinoa

1 cup crunchy peanut butter
? cup chopped fresh cilantro
¾ cup salsa
¼ cup packed brown sugar
½ cup soy sauce
1 tablespoon salt
¼ cup lemon juice
½ teaspoon cayenne pepper
½ teaspoon ground black pepper
3 tablespoons minced garlic
1 bunch green onions, chopped
3 skinless, boneless chicken breast halves - cut into strips
2 green bell peppers, seeded and cubed

Steps:

  • In a large mixing bowl, combine crunchy peanut butter, cilantro, salsa, brown sugar, soy sauce, salt, lemon juice, cayenne pepper, black pepper, garlic and green onions; mix well. Add chicken to the marinade, cover and refrigerate for at least 4 hours.
  • While the chicken is marinating, soak bamboo skewers in water for one hour so they will not burn on the grill.
  • Preheat the barbeque to a high heat. Or preheat your oven to broil.
  • Thread chicken onto skewers like a snake, and in between each loop add a cube of bell pepper.
  • Grill skewers, turning once, over charcoal for 4 to 6 minutes; or broil, until just browned and cooked through.

  • NOTE: if you don't want to use skewers, use a 9X13 or larger greased pan. place the chicken and veggies in the pan alternating as if you were using skewers. brush completely with the marinate. don't cover the pan. bake at 450 degrees center shelf for 20-30 minutes - don't turn the meat/veggies. check a few pieces of chicken (potatoes too) for doneness. you may need to cook an additional 5-10 minutes. take out of oven and let sit for a few minutes.
