1 cup unsalted butter
1 1/2 white sugar
2 eggs
1/4 teaspoon salt
2 1/2 flour
1 cup chocolate chips
2 teaspoons blue food coloring
2 teaspoons vanilla, escence

Steps:

  • Preheat oven to 350°F.
  • Mix butter and sugar.
  • Add egg and vanilla to mixture (you can use an electrical mixer for this).
  • Add flour, salt and chocolate chips (if there is a lot of flour left over, use your hands to mix it in.) If the dough is too wet add a bit more flour.
  • Add the blue food colouring.
  • Mold the dough into little balls and place evenly on a UNGREASED cookie sheet (far enough so they don't bake together).
  • Put them in the oven for 8-12 minutes.
  • When finished baking, put them on a cooling rack and enjoy!

2?½ cups all-purpose flour
2 teaspoons baking powder
1 pinch salt
½ cup butter
1 cup white sugar
2 eggs, beaten
½ teaspoon lemon extract
½ cup milk
1 cup fresh blueberries

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheet.
  • Sift together flour, baking powder and salt.
  • In a large bowl, cream butter or margarine with sugar. Beat in eggs and lemon flavoring. Mix in milk and flour mixture alternately in three parts, starting with the milk. Gently mix in blueberries.
  • Drop batter by tablespoons onto prepared sheets 1 1/2 inches apart.
  • Bake 12 to 15 minutes.

  • CHANGES: The first change I made was: 1/2 cup of softened (not melted) butter and 1/2 cup of unsweetened applesauce both and the eggs at room temp.This reduces the amount of fat per cookie and increases the fiber a bit....you can not taste it. 2nd Change: Use Cake flour instead of All Purpose Flour.....You can make you own using DIY Cake Flour by Candy Hummer, found here on JAP. 3rd Change: compliments of Annette AKA greeneyz Chill the dough, and spoon (I use a cookie scoop) over night or at least several hours....and between each loading of the cookie sheets. Only place cookie dough on completely cooled cookie sheets.
