In Isan (and the rest of Thailand), green papaya salad is called som tum, with “som” meaning “sour” and “tum” referring to the pounding sound of the large pestle used to crush ingredients. It is eaten by itself as a snack, or with marinated grilled beef and chicken.

Yield 4 to 6 servings

Number Of Ingredients 12

1 large or 2 small cloves garlic, peeled
1/4 teaspoon salt
1 tablespoon dry-roasted salted peanuts, more for garnish
2 fresh bird chilies or serrano chilies, sliced
1/2 teaspoon raw sugar or white sugar
1 tablespoon dried shrimp (optional)
2 tablespoons fresh lime juice
1 to 2 tablespoons fish sauce (nam pla), to taste
2 plum tomatoes, 1 large round tomato, or 8 grape tomatoes, coarsely chopped
1/2 pound long beans, trimmed and cut into 1 1/2-inch lengths (optional)
1 small to medium green (unripe) papaya (see Note)
Lettuce for serving (optional)

Steps:

  • In a blender or mortar, blend or pound garlic, salt, peanuts, chilies, sugar and shrimp (if using) into a paste. Transfer to a large bowl and mix in lime juice and fish sauce. Use a spoon (or the mortar) to lightly crush tomatoes and beans (if using), then add to bowl and mix lightly.
  • Peel and coarsely grate or shred papaya, discarding seeds and inner membrane. There should be 4 to 6 cups.
  • Add papaya to bowl and lightly but thoroughly toss together. Taste for seasoning. Mound in a bowl (if desired, line bowl with lettuce leaves beforehand). Sprinkle with peanuts and serve.

Every bit of this beef stew is infused with wonderful flavor from slow cooking in a dutch oven. Pair it with a side of grains, root vegetables or even pasta.

Number Of Ingredients 13

2 lbs beef stew meat (or beef chuck cut into 1" pieces)
2 tbsp olive oil
2 1/2 tsp sea salt or to taste
2 tablespoon Noubess Steak Seasoning (Salt-Free)
2 garlic cloves (minced)
¼ cup fresh chopped parsley
¼ cup lemon juice
1 tbsp tomato paste
1 medium red onion (sliced)
1 diced red bell pepper
2 cups chopped tomatoes
2 bay leaves
½ green (almost orange papaya (about 1 pound or lespeeled and diced)

Steps:

  • Clean your meat with lemon or vinegar. Rinse with water and pat dry. Place in a bowl.
  • Add olive oil, salt, steak seasoning, garlic, parsley, and lemon juice. Let marinate for a couple of hours or overnight.
  • In a large, Dutch oven, add beef with marinade. Bring to a boil over medium heat. Once it starts to boil, lower heat and continue to cook.
  • When the meat is halfway cooked, add onion, bell pepper, tomato paste, and tomatoes. Stir to mix. Continue to cook for 5 minutes.
  • Add papaya pieces and bay leaves, stir to mix, cover and let cook until beef pieces are fully cooked on low heat stirring occasionally. Adjust seasoning is necessary and continue to cook for another 3 - 4 minutes. Remove from heat and serve with a side of grains, pasta or root vegetables.
