3 pounds real baby carrots or regular carrots (rainbow if you can find them) cut into matchsticks
1/4 cup olive oil
3 tablespoons brown sugar
1 1/2 tablespoons cumin
Pinch chili powder
Kosher salt

Steps:

  • Preheat the oven to 400 degrees F.
  • In a bowl, mix together the olive oil, brown sugar, cumin and chili powder; season with salt. Toss the carrots in the flavored oil, then spread them out on a parchment- or foil-lined baking sheet. Bake until browned and tender, 30 minutes to 1 hour

2 bags colorful carrots
1/2 bunch thyme
3 tablespoons honey
olive oil
salt/ pepper

Steps:

  • Heat the oven to 325°F and place the carrots on a sheet tray with parchment paper. After the carrots are peeled and washed place the carrots on the shoe tray and season them with 2 tablespoons of honey, thyme, salt, pepper, and a nice drizzle of oil oil. Cover the sheet tray with aluminum foil and bake for 45/ 50 minutes. (Or until tender)
  • once the carrots are cooked:
  • heat the oven to 450 degrees / or top broil
  • remove the aluminum foil, drizzle again with honey
  • and broil/ or bake at higher for another 5 minutes.
  • This will give the carrots that nice glaze that we want from the honey.
  • and that’s it, either serve it as a side dish at the center of the table, or serve it with your main.
  • they go perfectly with fish or meat!
